Sticky Sesame Bars with Raw Chocolate Drizzle
I'll eat just about anything with "sticky" in the title, which prompted me to create a sticky energy bar my raw foodie friends and I can savor together. I've cast sesame seeds in a lead role here because I'm tired of seeing one of my favorite ingredients marginalized atop hamburger buns and everything bagels—they have a terrific earthy-nutty flavor and a delicate crunch that goes well with so many dishes. Moreover, their nutritional profile will leave you star-struck. Sesame seeds are a very good source of manganese and copper and a good source of protein, calcium, magnesium, iron, phosphorus, vitamin B1, zinc, and dietary fiber. Further, they contain two special types of fiber, sesamin and sesamolin, which are members of the lignans group and can lower "bad" cholesterol and help prevent high blood pressure. And did I mention chocolate? Namely, raw chocolate drizzle? Sesame seeds plus raw chocolate drizzle equals crazy good.

My Unexpected Love Affair with Sticky Sesame Bars

As a busy professional, time is my most precious commodity. I’m always searching for healthy, delicious snacks that don't require hours in the kitchen. That's why these sticky sesame bars have become a lifesaver – and a delightful afternoon treat! The recipe is surprisingly simple, yet the result is a truly decadent and satisfying energy boost. The combination of nutty sesame seeds, subtly sweet agave nectar, and the rich dark chocolate drizzle is pure bliss. It's the perfect blend of textures and flavors – a satisfying crunch followed by a smooth, melt-in-your-mouth chocolate finish.

What initially drew me to this recipe was the promise of "sticky." I have a weakness for anything with that descriptor, and these bars certainly live up to their name. The perfect balance of ingredients creates a texture that's both chewy and firm, holding together beautifully without being overly dense. I also appreciate the versatility of the recipe. You can easily adjust it to suit your dietary preferences and the ingredients you have on hand. For example, I've experimented with different types of nuts, and each variation brings a unique flavor profile. I've also swapped out the agave nectar for honey, depending on what's in my pantry.

The nutritional benefits are a significant bonus. Sesame seeds are nutritional powerhouses, packed with essential vitamins, minerals, and healthy fats. Adding chia seeds further enhances the nutritional value, providing extra fiber and omega-3 fatty acids. The raw chocolate drizzle not only elevates the flavor but also offers antioxidants. All in all, this is a guilt-free indulgence – a healthy treat that satisfies both my sweet tooth and my need for a quick and nutritious snack. It's become a staple in my week, offering a delicious and energizing pick-me-up whenever I need it.

Beyond the convenience and taste, these bars are incredibly versatile. They're perfect for taking on the go – a healthy addition to my lunchbox or a satisfying energy boost during a long workday. They also make a great dessert alternative for when I'm craving something sweet but want to make a healthier choice. The bars are easy to customize; I sometimes add dried fruit or a sprinkle of sea salt for extra flavor. The possibilities are endless!

I've even surprised some friends and colleagues with batches of these bars, and the response has been overwhelmingly positive. The recipe is so simple, it’s almost embarrassing how delicious they are. They’ve become a go-to gift for potlucks and small gatherings – a healthy, delicious, and easily transportable treat everyone appreciates. I love that I can create something so flavorful and nutritious without spending hours in the kitchen.

The process of making these bars is incredibly therapeutic for me. There’s something deeply satisfying about combining simple ingredients and transforming them into something so delicious and visually appealing. The act of measuring, mixing, and spreading the mixture is a calming ritual, a short escape from the demands of my day. It's a mindful activity that allows me to reconnect with myself, appreciate the simplicity of creating something from scratch, and enjoy the anticipation of indulging in the delicious end result.

More than just a snack, these bars represent a commitment to healthy eating without compromising taste or convenience. They are a reminder that it is possible to nourish my body and indulge my cravings simultaneously. They are a testament to the joy of cooking, a creative outlet that allows me to express my love for good food in a simple, yet elegant way. And who knows, maybe I’ll even try my hand at some of the variations suggested in the recipe—raw honey bun bars, anyone?

Step-by-step

    • Line an 8-inch square baking pan with foil or parchment paper and grease the pan with coconut oil or vegetable oil.
    • Place the nuts, sesame seeds, and chia seeds in a food processor and process until finely chopped. Add the agave nectar, nut or seed butter, oil, vanilla, and salt. Process, using on/off pulses, until the mixture is blended and begins to stick together and clump on the sides of the bowl.
    • Transfer the mixture to the prepared pan. Place a large piece of parchment paper, wax paper, or plastic wrap (lightly greased with coconut or vegetable oil) atop the bar mixture and use it to spread and flatten the mixture evenly in the pan; leave the paper or plastic wrap to cover. Place the mixture in the freezer for 30 minutes.
    • To prepare the chocolate drizzle: Mix the oil, agave nectar, and cocoa powder in a small bowl until blended. Remove the bar mixture from the freezer, uncover, and decoratively drizzle or spread with the chocolate mixture. Refrigerate for at least 4 hours or place in the freezer for 1 hour until the mixture is firm.
    • Using the liner, lift the mixture from the pan and transfer to a cutting board. Cut into 20 bars. Store in the refrigerator or freezer.
