Momma Green's Pot Luck Mac-N-Cheese
This is a totally simple recipe that you can easily make in large or small quantities. This recipe as-is will serve about 16-24 people, but you can take all ingredients (with the exception of the oil) down in equal measurements to make it family size or just for two. It's quite simply a delicious mac-n-cheese that is creamy and 100% homemade. A huge hit every time I've made it. I especially like to serve it at Italian Pot Lucks for a change to spaghetti and other red pastas. You can also make this dish the night before up to the point it's ready for baking, put in the fridge and cook it the following day.

Momma Green's Pot Luck Mac-N-Cheese: A Crowd-Pleasing Classic

As a busy mom, finding time to cook can be a real challenge. But when it comes to potlucks and family gatherings, I always strive to bring something special – something that will not only fill bellies but also warm hearts. That’s where my Momma Green’s Pot Luck Mac-N-Cheese comes in. This recipe is my go-to dish for any occasion, big or small. It's incredibly versatile, easily adaptable to different serving sizes, and guaranteed to be a hit with everyone, from picky eaters to seasoned foodies.

The beauty of this mac-and-cheese lies in its simplicity. Forget complicated techniques and obscure ingredients. This recipe uses everyday staples, transforming them into a creamy, cheesy masterpiece. I often make a giant batch for potlucks, enough to feed a crowd of 16-24 people. But the best part? You can easily scale it down to family-size portions or even just for two. Just reduce all ingredients proportionally (excluding the oil, of course!), and you're good to go. The flavors are robust and comforting, a perfect balance of cheesy goodness and perfectly cooked pasta. I love how versatile this recipe is. It’s fantastic served at potlucks, especially Italian ones – a delightful alternative to the usual spaghetti and red sauces. It adds a touch of creamy comfort to a vibrant spread.

What really sets this mac-and-cheese apart is the homemade touch. It's a far cry from the boxed variety, offering a level of richness and flavor that simply can't be replicated. The creamy cheese sauce is made from scratch, ensuring a smooth, decadent texture that coats every strand of pasta. I often make it the night before, taking it all the way up to the baking stage. Then I refrigerate it, ready to pop into the oven the next day – making it an absolute lifesaver for busy days. I always receive so many compliments whenever I bring this dish to a party. People just can't get enough of the creamy, comforting deliciousness, and that's incredibly rewarding. Knowing I've created something so loved and appreciated makes it all the more special. It’s not just about the food, but also the connections it creates, the shared moments of joy around a table filled with delicious food.

Tips and Variations:

  • Spice it up: Add a pinch of red pepper flakes to the cheese sauce for a little kick.
  • Herby goodness: Incorporate fresh herbs like chives or parsley for an extra layer of flavor.
  • Gourmet cheese: Experiment with different types of cheese. Gruyere, cheddar, or a blend of your favorites would be delicious.
  • Make it your own: Add cooked broccoli, bacon, or roasted vegetables for a heartier mac-and-cheese.
  • Crispy topping: Instead of sliced cheese, try breadcrumbs for a crunchy topping.

It's a recipe that keeps on giving, one that nourishes not only the body but also the soul. Step-by-step

    • Cube your cheese and set aside in a large bowl or pot.
    • Add oil to a large stock pot of water. Add in noodles and boil until noodles are just shy of done. Drain noodles and transfer them to a foil roasting pan or other large pan that can go into the oven. If I know I can take my pan home that day, I'll foil line my metal roaster and take it. Otherwise, you'll need a cookie sheet or box under the foil roaster for transferring to your event.
    • On med-high heat add in melted butter and flour and mix until well blended. Slowly whisk in the milk. Continue to stir mixture until sauce thickens and milk begins to boil. Remove from heat and immediately add the sauce to the cheese you previously set aside. Mix until all the cheese is fully melted in with the sauce. Add in Salt and Pepper.
    • Pour cheese sauce over the noodles until well blended. Add sliced cheese on top and bake in the oven at 350 degrees for approx. 1 hour or until cheese is bubbly and starting to brown.
