Step-by-step

    • Rinse the ribs and cut them in half. Pat them dry with paper towels.
    • In the bottom of the cooker, add 1/4 cup of shortening or lard. Set the cooker to saute and brown the ribs on all sides. When browning is complete, clear cooker setting.
    • In a small mixing bowl, add the salt, pepper, 1 tablespoon dried cilantro, oregano, and cumin; mix well. Sprinkle over meat in the cooker. Add the garlic, the juice of two limes and the juice of the orange, the Coke cola, and 1 diced onion. Add enough water to come up level with the meat (you can also use pineapple juice).
    • Cover and set to slow cook for 6-8 hours on low.
    • When done cooking, remove the meat and shred it.
    • (Optional Step: Place the shredded meat in a hot skillet with a little shortening or lard. Cook for 2-3 minutes, tossing and stirring continuously, to crisp up the meat if desired.)
