Gamberi alla Parmigiana (Shrimp Parmigiana)
Breaded shrimp is universal, but shrimp parmigiana is distinctly Italian American. I first encountered this dish when we opened Buonavia, our first restaurant, in 1971, and Chef Dino put it on the menu. Shrimp parmigiana was a regular weekly special; people loved it, and it is still a delicious dish today.

Gamberi alla Parmigiana: A Taste of Italy in My Kitchen

As a busy working mom, finding time to cook delicious and satisfying meals can be a challenge. Weeknights often feel like a whirlwind of school pick-ups, homework help, and the ever-present to-do list. But even amidst the chaos, I crave those moments of culinary creativity, those opportunities to create something special for my family. That's where recipes like Gamberi alla Parmigiana, or Shrimp Parmigiana, come in. This dish is a testament to the fact that incredible flavor doesn't have to mean hours in the kitchen. It’s a quick, easy, and elegant dish that always impresses, whether I'm serving it to my family or to friends.

The beauty of this recipe lies in its simplicity. The combination of succulent, breaded shrimp, rich marinara sauce, and the melty goodness of mozzarella and Grana Padano cheese is simply irresistible. The breading adds a delightful crunch, the sauce provides a comforting warmth, and the cheese offers a luxurious, satisfying finish. It's the kind of dish that satisfies everyone, from picky eaters to sophisticated palates. And the best part? It comes together relatively quickly, which is a huge plus on those busy weeknights when I need a delicious meal on the table without spending all evening in the kitchen.

More than just a meal, this Shrimp Parmigiana is a taste of tradition. My own introduction to this dish is deeply personal. My grandmother, a true culinary artist, frequently made something very similar, and for me it evokes images of Sunday family dinners filled with warmth, laughter, and a table overflowing with love and delicious food. This recipe is not just about the shrimps, sauce or cheese itself; it’s about the memories and tradition that it carries with it, something I strive to instill in my own family. Every time I make this dish, it brings me back to those cherished moments, and creates new ones with my children. And that’s truly priceless.

The ease of preparation doesn’t diminish the flavor profile; in fact, the simplicity allows the quality ingredients to shine. I always opt for high-quality shrimp, making sure they're fresh and succulent. A good quality marinara sauce is also key – the rich and bold flavor enhances the overall taste of the dish. And I never skimp on the cheese. The creamy mozzarella and nutty Grana Padano create a perfect balance of textures and tastes, taking the dish to the next level.

Beyond the weeknight dinner routine, this Shrimp Parmigiana is versatile enough for entertaining. It’s a beautiful and impressive dish that’s sure to wow your guests. Serve it with a simple side salad and some crusty bread, and you have a complete and satisfying meal that’s perfect for any occasion. I’ve even been known to adapt it slightly for a lighter lunch, using less cheese and baking it in individual ramekins. The possibilities are endless!

So, the next time you're looking for a delicious and effortless dinner recipe that the whole family will love, give this Shrimp Parmigiana a try. It’s a guaranteed crowd-pleaser, a taste of Italian-American comfort food, and a reminder that even amidst the chaos of daily life, we can always find time to create something special, something delicious, something that brings us joy. And for me, that’s the ultimate reward.

Beyond the Recipe: A Culinary Journey

Cooking, for me, is more than just preparing a meal; it's a journey of discovery, a creative outlet, and a way to connect with my heritage. I love experimenting with different flavors and techniques, adapting recipes to my own taste, and discovering new culinary adventures. Each dish is a story waiting to be told, a reflection of my own experiences and passions. From the simple weeknight dinners to the more elaborate holiday feasts, every meal represents an opportunity to bring people together, create memories, and share the joy of food.

Step-by-step

    • Preheat oven to 425 degrees F.
    • Spread the flour on a plate, beat the eggs and milk in a shallow bowl, and spread the bread crumbs on a plate. Season all three with kosher salt.
    • Working a few at a time, dredge the shrimp in the flour, then the eggs and then the bread crumbs. Put the breaded shrimp on a baking sheet.
    • Heat 1 inch of vegetable oil in a straight-sided skillet until the tip of a shrimp sizzles on contact. Fry the shrimp in batches, taking care not to crowd them, until golden on all sides, about 2 to 3 minutes per batch. Drain the shrimp on paper towels, and season with salt.
    • Mix together the mozzarella and grated Grana Padano in a bowl.
    • Spread 1 cup marinara sauce in the bottom of a 10-by-15 inch Pyrex baking dish.
    • Arrange all the shrimp in one layer, and drizzle with 1 1/2 cups sauce.
    • Sprinkle with the cheese mixture, and spoon dollops of the remaining 1/2 cup sauce on top.
    • Place in the oven, and bake until cheese is browned and crusty and sauce is bubbly, about 15 to 20 minutes.
