Chicken Fajitas
If you can find a store bought fajita sauce to add to chicken and vegetables after sauteeing, that is nice. Rick Bayless makes one I know, and there are several other brands. If you dont have, that is fine, just try to marinate the chicken longer to get that marinade flavor into it.

My Simple, Flavorful Chicken Fajitas

As a busy working mom, I'm always on the lookout for quick, easy, and delicious weeknight dinners. Chicken fajitas fit the bill perfectly! They're incredibly versatile, allowing for customization to everyone's taste, and they're surprisingly simple to make, even on a hectic weeknight. This recipe is my go-to, and I've tweaked it over the years to be both flavorful and efficient.

The key to amazing fajitas, in my opinion, lies in the marinade. I use a simple combination of pineapple juice, teriyaki sauce, and chili powder. The pineapple juice adds a touch of sweetness that balances the savory teriyaki and the kick of the chili powder. I highly recommend marinating the chicken for at least an hour, or even better, overnight. The longer it marinates, the more tender and flavorful the chicken will become. This step is truly where the magic happens!

Once the chicken is marinated, cooking the fajitas is a breeze. I usually use hot chili oil for a little extra zest, but any oil will work. The chicken cooks quickly, and I like to add the sliced peppers and onions during the last few minutes of cooking. This ensures everything is cooked through and still has a nice crunch. The optional addition of sliced tomatoes adds a refreshing burst of freshness to each bite.

Serving the fajitas is where the fun begins! Warm flour tortillas are a must. I love to load them up with the delicious chicken and vegetable mixture, then add my favorite toppings: guacamole, sour cream, and salsa. It’s a fiesta of flavor in every bite. My kids love helping to assemble their own fajitas, making it a fun family activity. It’s a perfect way to bond over a meal and enjoy the delicious result of our combined efforts.

The best part about this recipe is its adaptability. Feel free to experiment with different vegetables. Bell peppers in various colors add vibrant color and subtle flavor differences. Zucchini and mushrooms would also be delicious additions. And if you’re feeling adventurous, try adding some grilled pineapple to the mix for an extra layer of tropical sweetness. I find that a little bit of creativity in the kitchen makes mealtime more enjoyable and adventurous.

Don't be afraid to adjust the spice level to your liking. If you prefer a milder fajita, simply reduce the amount of chili powder. If you want things a little spicier, then add a pinch of cayenne pepper or some chopped jalapeños. The beauty of this recipe lies in its flexibility. It's a blank canvas for your culinary imagination!

Beyond the practicality and deliciousness, these chicken fajitas represent more than just a meal for me. They represent family dinners, easy weeknight solutions, and a commitment to creating delicious food for the people I love. It’s a dish that always seems to bring smiles and happy memories, and it's a recipe I’m happy to pass on for generations to come. From simple weeknight dinners to special gatherings, these Chicken Fajitas will always hold a special place at our table.

This recipe is a cornerstone of our family’s culinary traditions. It’s simple, adaptable, and always brings a smile to everyone’s face. So next time you're looking for a quick and delicious dinner that's easy to customize, give my Chicken Fajitas a try. You won’t be disappointed!

Step-by-step

    • Mix the pineapple juice, teriyaki sauce and chili powder and marinade sliced chicken for at least an hour. I try to marinate for several hours or overnight.
    • Drain off the marinade and saute the chicken in the hot chili oil. Any oil will do, I like the chili oil to make it spicier!!!
    • Add the sliced chicken, peppers, onions and tomatoes and saute until done.
    • Serve on warm flour tortillas and garnish with guacamole, sour cream and salsa.
    • If you can buy a store bought fajita sauce...it is nice to add that after sauteeing for more flavor. Fine without it though.
