My Simple, Refreshing Cucumber Herb Dip

As a busy working mom, I’m always looking for quick and easy recipes that are both healthy and delicious. This Cucumber Herb Dip fits the bill perfectly! It’s incredibly simple to make, requires minimal ingredients, and the fresh, vibrant flavors are a welcome change from heavier dips. I often find myself making this dip for impromptu gatherings with friends or as a healthy snack for the kids after school. The best part? It's incredibly versatile.

The beauty of this dip lies in its adaptability. The base is a wonderfully refreshing blend of cucumber, tomato, and herbs. The creamy sour cream adds a tangy richness that complements the fresh vegetables beautifully. I like to adjust the amount of sour cream depending on my preference – sometimes I use a bit more for a creamier texture, other times I stick with less to keep it lighter. The cumin adds a subtle earthiness that elevates the entire dip, while the lemon and lime juices provide a bright, zesty contrast. I often adjust the herbs based on what I have on hand – sometimes I add a little dill or even some finely chopped mint for an extra layer of flavor.

This dip is fantastic served with tortilla chips, but the possibilities are truly endless. It makes a wonderful topping for grilled chicken or fish, adding a refreshing coolness that cuts through the richness of the protein. I’ve even used it as a spread in pita pockets for a quick and healthy lunch. It’s a perfect accompaniment to grilled vegetables or falafel. The possibilities truly are endless! The subtle similarity to Tzatziki sauce, that delicious Greek dip, makes it a welcome addition to any Mediterranean-inspired meal. I’ve had friends tell me it’s perfect with gyros, and I can absolutely see why.

The recipe itself is so straightforward; it's almost foolproof! The key is to properly drain the cucumber to prevent a watery dip. I usually let it sit in a colander with salt for a bit, then gently pat it dry with paper towels before mixing in the other ingredients. This simple step makes all the difference in achieving that perfect creamy consistency.

Beyond its ease of preparation and versatility, this dip is a healthful option. Cucumbers are low in calories and high in water content, making them a refreshing and hydrating addition to any meal. The herbs provide a boost of vitamins and antioxidants, while the sour cream adds a dose of protein and calcium. It's a guilt-free pleasure that I feel good about serving my family and friends.

Whether you’re a seasoned cook or a kitchen novice, this Cucumber Herb Dip is a recipe that will undoubtedly become a staple in your repertoire. It's quick, easy, flavorful, and adaptable – everything a busy woman could ask for in a delicious and healthy snack or appetizer. Give it a try, and I'm sure it will become one of your go-to recipes as well!

Ingredients I use:

  • 2 cups finely chopped or grated seeded peeled cucumber
  • 1/2 cup finely chopped seeded tomato
  • 1/4 cup chopped red onion
  • Greens of 2 green onions chopped fine
  • 1/4-1/2 cup fresh cilantro chopped fine
  • 1 garlic clove minced or pressed
  • 1/4 -1/2 cup sour cream (I used 1/4 cup plain)
  • 1 tsp lemon juice
  • 1 tsp lime juice
  • 1/4 tsp ground cumin
  • 1/2 tsp sea salt
  • Tortilla chips (for serving)

Step-by-step

    • Remove seeds from cucumber, chop fine, put in colander, and add ½ teaspoon salt.
    • Let rest for 10 minutes to drain juice.
    • Use paper towel to get excess moisture out.
    • In a small bowl, combine the first seven ingredients.
    • In another bowl, combine the sour cream, lemon juice, lime juice, cumin, and remaining salt.
    • Pour over cucumber mixture and toss gently to coat.
    • Serve immediately or chill.
    • Serve with chips or can be used to top a pita pocket, fish or chicken.
