    • Form into 4 balls and flatten into patties about 1/2 inch thick.
    • Melt the lard in a large skillet over med. heat and brown patties.
    • Remove browned patties from pan and set aside.
    • Add onions to skillet and cook till soft.
    • Stir in flour, when onions are ready, scraping any browned bits left from the patties.
    • Gradually mix in the beef broth and sherry.
    • Simmer and stir over med-high heat until gravy thickens, add water or more broth as needed.
    • Turn heat to low and return patties to the gravy and onion mixture, cover and simmer until patties have re-warmed, about 20 min.
