Denise's Greek Meatballs

This was adapted from a few other recipes. I used an equal combination of chicken and beef, but ground meat in whatever combination you like could be used. The zucchini adds moisture, but makes them a bit delicate so you can either refrigerate before forming into balls, or make into patties.

Denise's Delicious Greek Meatballs

Denise's Greek Meatballs: A Busy Mom's Quick and Healthy Meal

Life as a working mom is a whirlwind. Between juggling work deadlines, school pick-ups, and keeping the household running smoothly, finding time to cook a healthy and satisfying meal often feels impossible. That's why I'm always on the lookout for recipes that are quick, easy, and delicious – recipes that don't require a culinary degree or hours spent in the kitchen. These Greek meatballs fit the bill perfectly. They’re incredibly versatile, adaptable to whatever ground meat I have on hand, and the flavors are bright and satisfying.

I adapted this recipe from a few others I found online, tweaking it to fit my busy schedule and family's preferences. The original sources are a bit hazy now – the internet is a vast sea of culinary inspiration, after all! But the core concept remained the same: a simple, flavorful meatball recipe that could be customized to suit any taste. One of my favorite things about this recipe is the addition of zucchini. It adds a surprising amount of moisture to the meatballs, making them incredibly juicy and tender. If you’re worried about the zucchini making them too soft, simply grate it, squeeze out the excess water, and even refrigerate the mixture for a bit before shaping the meatballs. This ensures they hold their shape beautifully during cooking.

Why I Love This Recipe:

  • Speed and Efficiency: The prep time is minimal, and the cooking process is straightforward, making it a perfect weeknight meal. I often prep the meatball mixture in the morning and form the balls right before cooking, speeding up the process even more.
  • Flavor Explosion: The combination of oregano, garlic, and a hint of pepper creates a bright, zesty flavor that complements the ground meat perfectly. Feel free to adjust the seasoning to your own liking. I often add a pinch of red pepper flakes for a little extra kick.
  • Healthy and Nutritious: This recipe is a great source of protein and relatively low in fat, particularly if you use lean ground chicken or turkey. The added zucchini boosts the vegetable content, making it a more balanced and wholesome meal.
  • Versatility: The meatballs can be served in a variety of ways. My family loves them in pita pockets with a light tzatziki sauce, lettuce, tomato, and onion. They also make a delicious addition to salads, pasta dishes, or even served as appetizers with a dipping sauce.

Tips and Tricks for Success:

  • Don't Overwork the Meat: Gently mix the ingredients together. Overmixing can result in tough meatballs.
  • Squeeze Out the Zucchini Water: This is crucial for preventing soggy meatballs. Wrap the grated zucchini in a clean kitchen towel and squeeze firmly to remove as much liquid as possible.
  • Adjust the Seasoning to Your Taste: Feel free to experiment with different herbs and spices to create your own unique flavor profile.
  • Make Ahead: You can prepare the meatball mixture ahead of time and store it in the refrigerator until you're ready to cook. This saves valuable time on busy weeknights.
  • Leftovers are a Treat: These meatballs are just as delicious the next day! They're perfect for lunch or a quick dinner.

These Greek meatballs have become a staple in my household. They're a versatile, healthy, and utterly delicious meal that even the pickiest eaters will enjoy. Give them a try, and I’m confident they'll quickly become one of your family's favorites, too! They truly are a testament to the fact that healthy, flavorful meals don't have to be complicated or time-consuming. And that's a sentiment any busy mom (or anyone, really) can appreciate!

Step-by-step

    • Mix all ingredients together well (make sure to squeeze the water out before adding).
    • Form into meatballs (I made large ones yielding 12 from this recipe).
    • Place formed meatballs in a frying pan, add 1/2 inch water and the olive oil.
    • Cover and let steam for about 20 minutes on low-med heat.
    • Remove lid.
    • When water steams away, you will be left with the oil in the pan which you can use to brown the outside of the meatballs if desired.
    • Serve in a pocket pita with tomato, lettuce, onions and light tzatziki sauce.
