GF Banana or Pumpkin Bread: A Delightful Gluten-Free Treat

My Go-To Gluten-Free Banana or Pumpkin Bread

As a busy working mom, finding time to bake is a luxury, but when I do, it’s all about efficiency and delicious results. This gluten-free banana or pumpkin bread recipe has become a staple in my kitchen. It’s incredibly versatile, adaptable to whatever ingredients I have on hand, and always a crowd-pleaser. Whether I’m packing lunches for my kids or need a quick and easy dessert for a casual get-together, this bread never disappoints. The best part? It's incredibly simple to make, even on my busiest days. I often double the recipe and freeze half for later, which is a lifesaver on those mornings when I'm running late.

The beauty of this recipe lies in its flexibility. Sometimes, I'm in the mood for a comforting pumpkin bread, rich and spiced, perfect for a chilly autumn evening. Other times, the sweetness of a banana bread calls to me – a bright and cheerful treat that instantly lifts my spirits. This recipe lets me easily switch between the two, depending on my mood and the ingredients I have available. The addition of pecans or walnuts adds a wonderful textural element, a delightful crunch that contrasts perfectly with the soft, moist crumb of the bread. I also love experimenting with different gluten-free flour blends. I've used Pamela's, Tom Sawyer, and Better Batter flours and they all work equally well, yielding a beautifully textured loaf every time.

The secret to this bread’s success, in my opinion, is the balance of ingredients. The sweetness from the sugar is beautifully complemented by the subtle tang of the buttermilk, creating a perfect harmony of flavors. The eggs add richness and bind the ingredients together, while the baking soda ensures a light and airy texture. And of course, the star of the show is the pumpkin or mashed banana, providing moisture and a wonderful natural sweetness that enhances the overall flavor profile. It’s really a testament to how simple ingredients, combined in the right way, can create something truly special and incredibly satisfying. It’s more than just a recipe; it's a reminder that even amidst the chaos of daily life, there’s always time for a little bit of homemade happiness.

I often find myself sharing this bread with friends and neighbors. The smiles and compliments I receive are the best reward, proving that sometimes, the simplest pleasures in life are the most cherished. Whether it's a quiet morning with a cup of coffee and a slice of warm bread or a celebratory gathering with loved ones, this gluten-free banana or pumpkin bread is always a welcome addition. It's a taste of home, a taste of comfort, and a taste of pure joy. It's a recipe that has found its way into the hearts (and stomachs!) of my family and friends, and I hope it does the same for you.

So, whether you’re a seasoned baker or a complete beginner, give this recipe a try. You won’t be disappointed. It's a delightful treat that's sure to become a favorite in your kitchen, too. The versatility and ease of preparation make it perfect for any occasion, and the delicious results are guaranteed to bring a smile to your face – and those of your loved ones.

Step-by-step

    • Preheat oven to 325 (we use that temp with our convection and works great)
    • Grease and flour (gf) 9X5 inch loaf pan
    • Combine all ingredients in large bowl and mix well.
    • Transfer to pan.
    • Bake until top is golden brown and splits slightly, about 1 hour and 20 minutes. However, depending on the flour and your oven, watch after about 60 minutes and gauge from there.
