The Best Beef Stew: A Weeknight Wonder

As a busy working mom, I’m always on the lookout for recipes that are both delicious and easy to make. This beef stew fits the bill perfectly. It’s hearty, flavorful, and requires minimal hands-on time, making it ideal for those busy weeknights when you're juggling work, kids, and everything in between. I've adapted it over the years to suit my family's tastes, and it’s become a true family favorite.

The beauty of this stew lies in its simplicity. You brown the beef, sauté the vegetables, create a rich base with wine and broth, and then let the slow cooker do its magic. The result is a tender, melt-in-your-mouth beef stew with richly flavored vegetables. It’s the kind of dish that warms you from the inside out, perfect for a chilly evening. Serve it with crusty bread for dipping – the perfect way to soak up all that delicious, flavorful broth.

What I love most about this recipe is its versatility. Feel free to adapt it to your liking. Add different vegetables, experiment with herbs, or even use a different type of meat. I’ve been known to add mushrooms or parsnips for extra flavor and texture. Sometimes, when I'm feeling adventurous, I'll swap the red wine for a dry sherry. The possibilities are endless!

Beyond the Recipe: A Comfort Food Story

This beef stew isn't just a recipe; it’s a memory. It's a reminder of cozy nights, laughter around the dinner table, and the simple joy of sharing a delicious meal with loved ones. It reminds me of my grandmother’s kitchen, filled with the aroma of simmering spices and the warmth of a crackling fire. She used to make a similar stew, and although her recipe varied slightly, the essence of warmth and comfort remained the same.

For me, cooking is more than just preparing a meal; it’s a way to connect with my family, to share traditions, and to create memories that will last a lifetime. This beef stew embodies that spirit perfectly. It's a dish that’s both simple and sophisticated, comforting and satisfying, a true testament to the power of good food to bring people together.

Tips for Success:

Choosing Your Beef: A good quality chuck roast or stew beef works best for this recipe. Look for meat with a good amount of marbling, as this will ensure that the beef remains tender as it simmers.

Browning the Beef: Don't skip this step! Browning the beef adds a depth of flavor that you won’t get otherwise. Make sure to work in batches so that the beef browns properly and doesn't steam.

Slow Cooker vs. Stovetop: While I’ve given you the slow cooker instructions, this stew can also be made entirely on the stovetop. Simply simmer the stew in a Dutch oven over low heat for about 2-3 hours, or until the beef is tender.

Make it Ahead: This stew is even better the next day! The flavors have a chance to meld, creating a richer, more complex stew. It's perfect for meal prepping and makes for a wonderful weeknight dinner or a comforting weekend lunch.

Serving Suggestions:

  • Serve with crusty bread for dipping.
  • Add a dollop of sour cream or crème fraîche for a touch of tanginess.
  • Garnish with fresh herbs, such as parsley or thyme.
  • Pair it with a side salad for a well-rounded meal.

This beef stew is more than just a meal; it's an experience. It's a taste of home, a reminder of simpler times, and a celebration of the everyday joys of family and good food. So, gather your ingredients, put on some music, and let the comforting aroma of this delicious beef stew fill your kitchen. Enjoy!

Step-by-step

    • Pat meat dry with paper towels. Do not season.
    • Heat 1 tablespoon olive oil in a Dutch oven over high heat until shimmering.
    • Add half of beef and cook until well browned on all sides, about 8 minutes. Reduce the heat if oil begins to smoke or fond begins to burn.
    • Transfer beef to the slow-cooker.
    • Repeat with remaining beef and 1 tablespoon olive oil, then add to the slow-cooker.
    • Add 2 teaspoons olive oil to the now-empty Dutch oven if needed, add the onion and carrots.
    • Cook, scraping bottom of pan to loosen any browned bits, until onion is softened, 3-4 minutes.
    • Add garlic and tomato paste and cook, stirring constantly, until fragrant, about 30 seconds.
    • Add flour and cook, stirring constantly, until no dry flour remains, about 30 seconds.
    • Slowly add the wine, scraping bottom of pan to loosen any browned bits.
    • Increase heat to high and allow wine to simmer until thickened and slightly reduced, about 2 minutes.
    • Stir in the broth, bay leaves, thyme, and salt pork.
    • Bring to simmer, then transfer to the slow-cooker.
