Excellent dish - rich in flavor, especially if you like garlic. I use much more garlic/olive oil than called for in the recipe.

This Italian fish stew is bursting with flavor, yet surprisingly simple to make. It's a weeknight wonder that feels like a restaurant-quality meal without the fuss. The beauty of this dish lies in its simplicity – fresh ingredients, minimal prep time, and a result that’s truly magical. The fragrant garlic, the bright acidity of the white wine, and the juicy tomatoes all come together to create a symphony of taste that elevates the delicate flavor of the fish. I often find myself modifying the recipe to suit what's fresh at the market – sometimes I add a pinch of red pepper flakes for a little heat, or a squeeze of lemon juice at the end for extra brightness. The possibilities are endless!

One of my favorite things about Il Pesce in Brodetto is its versatility. It's perfect for a cozy weeknight dinner, an impromptu gathering with friends, or even a romantic date night. Don’t be afraid to experiment with different types of fish; firm, white fish like cod or snapper work beautifully. And, of course, don’t skimp on the garlic! The generous amount of garlic is what truly elevates this dish, lending a rich, savory depth that is simply irresistible. The aroma alone is enough to make your mouth water. This recipe is a testament to the fact that sometimes, the simplest dishes are the most rewarding. It’s a dish I’ve made countless times, and every time, it's a delicious reminder of the beauty of simplicity and fresh, high-quality ingredients.

Step-by-step

    • Choose a sauté pan that can comfortably accommodate the fish on a single layer.
    • Put on the olive oil and the onion, and turn on the heat to medium.
    • Sauté the onion until translucent.
    • Add the garlic and sauté until it becomes light gold in color.
    • Add the parsley, stir once or twice, then add white wine.
    • When the wine has bubbled away for a few moments, add the chopped tomatoes with their juice. Cook, uncovered, for 6 or 7 minutes, stirring from time to time.
    • Put in the fish. Sprinkle with several liberal pinches of salt and 2 or 3 grindings of pepper.
    • Cover the pan and turn down the heat to medium.
    • When the fish has cooked for 5 to 10 minutes (shorter time for slices) turn it and recover the pan.
    • Cook another 5 to 10 minutes then serve at once with the onions and juices from the pan.
