Best Spaghetti Sauce
My brother lived in Italy for a few years and he came back with a lovely recipe for spicy tomato sauce. He is a vegetarian, so I adjusted the recipe to include meat. Note: I usually use ground turkey, but any ground meat (chicken, beef, lamb, etc.) may be substituted. For the more fatty meats like beef or lamb, just drain the fat before adding the tomatoes.

Best Spaghetti Sauce - A Family Recipe

My Best Spaghetti Sauce Recipe: A Taste of Italy (and a Little Bit of Home)

Spaghetti night has always been a special occasion in our family. The aroma of simmering tomato sauce, the happy chatter around the table – it's a memory I cherish. My brother, after spending several years living in Italy, returned home with a gift far greater than souvenirs: a family recipe for the most incredible spicy tomato sauce. Being a vegetarian himself, he had perfected a meatless version, but I've adapted it to incorporate ground meat, making it a hearty, flavorful meal that satisfies everyone.

This recipe isn't just about the ingredients; it's about the process, the slow simmering that allows the flavors to deepen and meld together. It's about the anticipation, the tantalizing smell that wafts through the house as the sauce gently bubbles away on the stove. And it's about the shared meal, the joy of gathering around the table with loved ones, sharing stories and laughter, all fueled by a bowl of delicious, homemade spaghetti. It's a taste of Italy, yes, but it's also a taste of home, a warm and comforting reminder of the simple pleasures in life.

I've tried countless variations of spaghetti sauce over the years, from jarred versions to more elaborate restaurant recipes. Nothing, however, compares to this one. The secret, I believe, lies in the simplicity of the ingredients and the patience required in letting the sauce simmer. Don't rush the process! The longer it simmers, the more rich and complex the flavors become. It’s a perfect weekend project, something to enjoy while catching up on reading or enjoying some quiet time. The result? A sauce that is so unbelievably delicious, you'll be making it again and again.

I typically use ground turkey in this recipe, but feel free to experiment! Ground chicken, beef, or even lamb will work beautifully. Just remember to drain off any excess fat from the meatier options before adding the tomatoes. The tomatoes themselves are key; I prefer using a high-quality canned variety (a #10 can is perfect for this recipe) but freshly chopped tomatoes would work just as well, offering a beautiful burst of summery freshness.

The spices in this sauce are deceptively simple – garlic, onion, chili (I use serrano peppers for a good kick but jalapenos are a great alternative), basil, and oregano – but they create a symphony of flavors that dance on your tongue. Don’t be afraid to adjust the amount of chili depending on your spice tolerance. A little salt and freshly ground black pepper are all you need to round out the perfect flavor profile.

This spaghetti sauce recipe is more than just a dish; it’s a story, a legacy passed down (albeit with a few of my own modern tweaks). It's a reminder of family, of time spent together, of the joy of creating something delicious from simple, wholesome ingredients. So, gather your ingredients, put on some music, and prepare to embark on a culinary journey. You won't be disappointed.

Serving Suggestions:

Serve this sauce over your favorite pasta. I personally love it with spaghetti, but it also pairs beautifully with linguine, fettuccine, or even penne. For an extra touch of indulgence, garnish with fresh basil leaves and a drizzle of high-quality olive oil before serving. You can also add a side of crusty bread to soak up the delicious sauce. Enjoy!

Variations:

  • Vegetarian Version: Omit the ground meat and increase the quantity of vegetables for a hearty vegetarian option. Mushrooms, bell peppers, or zucchini would be excellent additions.
  • Creamy Sauce: Stir in a splash of heavy cream or crème fraîche at the end of the cooking time for a creamy, richer sauce.
  • Spicy Kick: Add a pinch of red pepper flakes for an extra level of heat.
  • Herby Twist: Experiment with other herbs, such as thyme, rosemary, or parsley, to create unique flavor profiles.

Step-by-step

    • Heat the oil on medium heat in a large, heavy saucepan until water dropped in sizzles gently.
    • Throw in the onions, chili, and garlic and fry until the onions are golden and translucent. DO NOT LET THEM BURN, burned garlic tastes terrible.
    • Increase the heat to high and add the meat.
    • Fry until the meat has just turned brown, then add the chopped tomatoes.
    • Bring the sauce to a slow boil, then turn the heat down to low and allow to simmer for as long as you want. The longer the sauce simmers, the better it is.
    • Taste the sauce, and season as necessary.
    • About ten minutes before you are ready to serve, turn off the heat, add the basil and oregano, throw in a splash more olive oil, and serve on top of your favorite pasta.
    • Enjoy!
