Mandy's Tomato, Basil, Mascarpone Sauce
This is a sauce that goes beautifully with anything. It is especially good when spooned over cooked chicken. It can be used to actually cook chicken in (or meat of your choice). Also good with fish as it has a delicate flavour and it is fantastic with low carb pasta. If you cant eat tomato then you could substitute chopped red pepper but it gives a very different flavour. I havent quantities as I do it by sight but here goes: Small serving - say for one or two people:

Mandy's Simple & Delicious Tomato, Basil, and Mascarpone Sauce

As a busy working mom, I'm always on the lookout for quick, easy, and delicious recipes that don't sacrifice flavor. This tomato, basil, and mascarpone sauce fits the bill perfectly. It's incredibly versatile, adaptable to my ever-changing schedule, and always impresses, whether it's a weeknight dinner or a casual weekend gathering.

The beauty of this recipe lies in its simplicity. There's no lengthy chopping or complex techniques involved. It's a perfect example of how a few high-quality ingredients, combined thoughtfully, can create something truly special. I often make a larger batch on the weekend and store it in the refrigerator for quick weeknight meals. It's amazing how something so simple can elevate even the most basic dishes.

One of my favorite ways to use this sauce is over grilled chicken breasts. The creamy mascarpone perfectly complements the savory chicken, while the bright tomato and basil add a refreshing touch. It's a winning combination that never disappoints. I also love using it as a base for pasta dishes. A simple toss with some cooked zucchini noodles or even regular pasta results in a satisfying and flavorful meal.

The versatility extends beyond chicken and pasta. I’ve also used this sauce as a topping for baked salmon, spooned over roasted vegetables, or even as a dip for crusty bread. The possibilities are truly endless, and it’s a great way to add a touch of elegance to any meal, without spending hours in the kitchen.

The best part? This sauce is incredibly forgiving. You don't need to be precise with measurements; I often eyeball the ingredients, adjusting to my taste preferences. Feel free to experiment with different herbs and spices to personalize the sauce to your liking. A pinch of red pepper flakes adds a subtle kick, while a sprinkle of Parmesan cheese adds extra richness.

Tips and Variations:

  • Fresh vs. Dried Basil: Fresh basil offers a more vibrant flavor, but dried basil works well in a pinch. If using dried basil, start with a smaller amount and adjust to taste.
  • Spice it Up: Add a pinch of red pepper flakes for a touch of heat.
  • Creamy Boost: A splash of heavy cream can add extra richness and creaminess to the sauce.
  • Cheese Alternatives: While mascarpone is my favorite, you can experiment with other soft cheeses, such as ricotta or cream cheese.
  • Roasted Tomatoes: Roasting the tomatoes before adding them to the sauce intensifies their flavor.
  • Serving Suggestions: This sauce is delicious over chicken, fish, pasta, vegetables, or even as a dip for bread.

This simple sauce is more than just a recipe; it's a testament to the power of fresh ingredients and a little bit of culinary creativity. It's a quick and easy way to elevate any meal and adds a touch of elegance to even the simplest of dishes. I hope you enjoy it as much as I do!

Whether you're a busy professional, a stay-at-home mom, or just someone who appreciates delicious and easy meals, this recipe is a must-try. It’s a versatile pantry staple that's always ready to transform a simple dish into something extraordinary. And the best part? It's so easy to make, even on the busiest of days!

Step-by-step

    • Melt the mascarpone cheese over a gentle heat and add the tomato and basil.
    • Simmer gently for a few minutes until the tomato is cooked.
    • You could add a little cream to the sauce if you don't want quite such a rich sauce.
    • Also add a bit of butter if you wish.
