Step-by-step

    • Heat oil (up to 2 tbsp) in wok or large frying pan.
    • Cut up chicken parts into small pieces (1/2-3/4" cubes) and add to hot oil.
    • Stir until chicken parts are no longer pink. Garlic can be added at this stage as well.
    • Add vegetables and stir them until they are done. Vegetables, such as carrots, broccoli, cauliflower and celery, should be added first.
    • When they are almost done, add other vegetables such as onions, cabbage, snow peas, green peas, water chestnuts, etc. that do not take so long to cook or only need to heat through.
    • If additional liquid is needed for cooking, use chicken broth.
    • Prepare the rice (white, brown, or a mixture) according to the package directions (instant or regular cook).
    • To prepare sauce, stir corn starch into about a cup of cold water.
    • Then add soy sauce until it is about the color of "coffee with cream."
    • Add that to the meat and vegetable mixture in the wok and stir until the sauce is thick.
    • Remove from heat.
    • Serve with rice. Add soy sauce to taste.
