My Favorite Weeknight Dinner: A Speedy Burrito Supreme

Dinnertime chaos? We've all been there. The kids are hungry, the clock is ticking, and the last thing you want is to spend hours in the kitchen. That’s why I’ve developed a go-to recipe that’s both delicious and incredibly quick: my take on the classic Burrito Supreme. Forget ordering takeout; this copycat recipe delivers all the satisfying flavors of a restaurant-quality burrito, but with the convenience of a home-cooked meal. Seriously, it's so easy, even on my busiest evenings, it's a lifesaver.

The beauty of this recipe lies in its simplicity. It's all about layering the flavors – the savory seasoned beef, the creamy refried beans, the tangy enchilada sauce, and the cool crunch of lettuce, tomato, and onion. I love using cheddar cheese, but feel free to experiment with your favorite blend. The whole thing comes together in a flash, and the end result is a hearty, flavorful burrito that’s sure to please everyone in the family. It's become a weekly staple in my house, and I know it'll become a favorite in yours too.

The secret to my speed? Smart prep. I often brown the ground beef ahead of time and store it in the fridge. Then, on busy weeknights, it’s just a matter of reheating it, assembling the burritos, and enjoying a delicious meal. The flavor actually deepens when you make the meat ahead, so it's a win-win. Plus, the kids even help with the assembly – a great way to get them involved in the cooking process and make it a fun family activity.

This recipe is truly versatile. Feel free to adjust the ingredients to your liking. Love extra spice? Add some jalapeños or a dash of your favorite hot sauce. Prefer a different type of cheese? Go for it! The great thing about this recipe is that it's a blank canvas for your culinary creativity. I've found that even the pickiest eaters can't resist the delicious combination of flavors in this burrito. And let's be honest – who can resist a warm, cheesy, perfectly rolled burrito?

Beyond its ease and deliciousness, this recipe is also a great way to use up leftover ingredients. Got some extra lettuce or tomatoes? Throw them in! This makes it an incredibly budget-friendly option, too. It’s a perfect example of how delicious and satisfying a home-cooked meal can be without breaking the bank or spending hours in the kitchen. So next time you’re looking for a quick, easy, and satisfying weeknight dinner, give my Burrito Supreme recipe a try. You won't be disappointed!

Beyond the Burrito: This recipe isn’t just about the burritos themselves. It’s about the ease, the speed, and the deliciousness that comes from making something truly special with minimal effort. And remember, cooking should be fun! Experiment with different fillings, adjust the seasonings to your taste, and most importantly, enjoy the process of creating a delicious meal for yourself and your loved ones. Happy cooking!

Step-by-step

    • In a medium bowl combine the ground beef with flour, chili powder, salt, minced onion, paprika, onion powder, and garlic powder.
    • Use your hands to thoroughly mix the flour and seasonings into the ground beef.
    • Add the seasoned beef mixture and the water to a large skillet over medium heat.
    • Mix well and use a spatula to break up the beef as it cooks.
    • Cook until the beef is fully cooked (the beef mixture should be thick and very smooth with no large chunks of beef remaining).
    • Heat up the refried beans in a microwave safe container for 1 1/2 to 2 minutes.
    • Place the flour tortillas on a microwave safe plate and heat for 30 to 45 seconds.
    • Prepare each burrito by first spreading about 1/4 cup of the refried beans onto the center of each heated tortilla.
    • Spread a portion of the meat mixture over the beans, pour on about a tablespoon of enchilada sauce over the meat.
    • Spread about 1 1/2 tablespoons of sour cream onto each burrito.
    • Arrange some of the lettuce, cheese, tomato and onion onto the burritos.
    • Roll up the burritos by folding the end of the tortilla closest to you over the filling.
    • Then fold either the left or right end over next.
    • Then fold the top edge over the filling.
