Step-by-step

    • Combine onion & margarine & heat in a skillet.
    • Add meat, 1/2 each of green and red chili sauces, cream cheese, cumin and green chilis.
    • Heat thoroughly stirring occasionally.
    • Stir in 1 cup of shredded cheese.
    • In a separate skillet heat approximately 4 Tablespoons oil and heat corn tortillas 1 at a time.
    • Place on a paper towel to drain.
    • Put 1/4 cup meat mixture, along with more shredded cheese (to taste) inside each corn tortilla, wrap and place seam side down in baking pan.
    • When all enchiladas are in the pan, pour the remainder of the red and green chili sauces over the enchiladas and top with more shredded cheese to taste.
