My Simple Lasagna Recipe: A Weeknight Staple

As a busy working mom, finding time to cook delicious and satisfying meals can often feel like a Herculean task. Between juggling work deadlines, school pick-ups, and keeping the house running smoothly, the last thing I want to spend my limited free time on is slaving over a complicated recipe. That's why I've perfected this simple lasagna recipe – it's quick, easy, and delivers that comforting, classic taste that everyone loves. The secret? Using no-boil lasagna noodles – a true game-changer for busy weeknights!

This lasagna isn't about fancy ingredients or intricate techniques; it's about creating a warm and satisfying meal that the whole family can enjoy without hours of prep work. I often adapt this recipe based on what's in my pantry – sometimes I add spinach for extra greens, other times I swap the mozzarella for a blend of cheeses. The beauty of this recipe is its flexibility; feel free to experiment and make it your own!

The magic of no-boil noodles: Let's talk about those amazing no-boil lasagna noodles. They're my secret weapon! No pre-boiling means significantly less time spent in the kitchen. Simply layer them directly into your baking dish, and they'll cook perfectly alongside the other ingredients. It's a small change that makes a big difference in terms of efficiency. It's important to note, however, that you need to make sure your oven temperature is correct, to avoid having raw pasta underneath.

Meatless Monday option: For a vegetarian variation, simply omit the ground pork. The rich sauce and cheese provide ample flavour, even without the meat. Adding vegetables such as mushrooms, zucchini, or eggplant can create a hearty and satisfying vegetarian lasagna.

Make it ahead: This lasagna is also great for meal prepping. You can assemble it completely the night before, cover it tightly, and refrigerate it until ready to bake. This means you can enjoy a delicious home-cooked meal even on the busiest of weekdays. Just add a little extra baking time to ensure everything is cooked through.

Serving suggestions: A simple side salad is the perfect complement to this lasagna. A crisp green salad with a light vinaigrette cuts through the richness of the lasagna, creating a balanced and refreshing meal. You can also serve it with a side of garlic bread for an extra touch of indulgence.

Leftovers: This lasagna is just as delicious the next day, if not better! The flavours have a chance to meld together, making it even more satisfying. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently in the microwave or oven until heated through.

This lasagna recipe has become a staple in my household. It's the perfect combination of flavour, convenience, and comfort. It's a meal that always brings smiles to my family's faces, and I hope it brings joy to your kitchen as well. Give it a try, and let me know what you think!

Tips for success:

  • Use a good quality spaghetti sauce for the best flavor. Homemade sauce is fantastic, but store-bought works well too.
  • Don't overcook the lasagna. It's better to slightly undercook it than to overcook it and dry it out.
  • Let the lasagna rest for a few minutes before slicing and serving. This will help it hold its shape and prevent it from falling apart.
  • Experiment with different cheeses! A blend of mozzarella, ricotta, and Parmesan is delicious.

Enjoy your delicious, easy, and satisfying lasagna!

Step-by-step

    • Prepare spaghetti sauce, fry ground pork, and mix.
    • For besamel, melt butter and mix in flour, stir continuously until lightly browned.
    • Heat milk and add into it while stirring, add small quantities at a time.
    • Butter an oven-proof glass dish and add in a layer of besamel.
    • Continue with noodle, besamel, pork and sauce, repeat 3-4 times. I use a dish that accommodates 3 pieces of noodle.
    • Finish the last layer of noodles with besamel and mozzarella on top of it.
    • Put into oven set to 230 celsius, cook until noodles are softened, adjust heat to 200 if cheese is browned and pasta still need cooking.
