Step-by-step

    • Preheat oven to 160° C
    • Grease a 15cm x 25cm loaf tin, line the base with greased paper
    • Sift flour, bicarb soda & cinnamon in a medium bowl with an electric mixer
    • Stir sugar, carrot, sultanas, ginger and walnuts
    • Combine the eggs and oil and add to flour mixture
    • Beat on medium speed for 5 minutes
    • Mixture will be fairly runny
    • Pour mixture into prepared loaf tin and bake for approximately 55 minutes
    • Turn onto wire rack to cool.
