Step-by-step

    • Put soy sauce, lemon juice, chopped chilli, sesame oil, chilli flakes, sugar and cayenne pepper in a small bowl and add pork. Stir well and pack down. Leave to marinade for 15 minutes while preparing any other side dishes.
    • Heat oil in wok or large non stick saucepan until really hot (just about to smoke). Add pork without marinade (use a fork or drain pork, but keep the marinade!).
    • Stir fry for a few minutes until brown. If excessive liquid appears, drain off into the marinade.
    • Add sugar snap peas, baby corn and mushrooms.
    • Stir fry on high heat for a a very few minutes. You want things crunchy, not fried to death.
    • Add marinade and stir fry for 5-10 minutes until reduced by maybe half.
    • Serve, ideally soon after cooking.
    • Very warming recipe for winter. You can freely adjust chilli content to taste.
