Step-by-step

    • Saute diced chicken in olive oil until tender but not overly cooked which will cause dry pieces. Season with salt and pepper. Set aside.
    • Drain beans and rinse. Season with salt and pepper and cumin, and set aside in a bowl. Do the same with corn.
    • Cut up lettuce and mix in generous amounts of cilantro. Set aside.
    • Cook rice in chicken broth and add lime juice. Add cilantro after cooked, if desired. Set aside.
    • Keep each food in a separate bowl and let each person add spoonfuls of what they want. Each person can layer their burrito bowls per their liking, starting with the rice. Top with sour cream, salsa, and/or salad dressings.
