Step-by-step

    • SAUCE: Heat ~2 tablespoons olive oil in a large saucepan.
    • Add garlic for a minute, then add onions and green peppers. Saute until soft.
    • Add any other seasonal vegetable(s) that you like, saute until soft.
    • Add tomatoes, tomato sauce, green olives, basil, oregano, thyme, and salt.
    • If you want a kick, add a very small amount of cayenne or crushed red pepper.
    • Simmer on medium heat for ~1 hour.
    • RICOTTA MIXTURE: Mix all ingredients until thoroughly mixed.
    • ASSEMBLING THE LASAGNA: Assemble layers in this order: Coat the bottom and sides of 9 by 11 baking dish with Sauce. Then Repeat This x3: Noodles, Ricotta Mixture, Spinach, Sauce, Mozzarella, Parmesan. Then top with: Noodles, Sauce, Mozzarella, Parmesan, Diced Basil, Oregano.
    • BAKING THE LASAGNA: Let assembled lasagna sit in fridge for as long as practical, up to 24 hours. This helps the flavors strengthen.
    • Bake in oven at 350 for ~1 hour.
    • Remove from oven and sit out for 15+ minutes until cool enough to serve.
