Ingredients:

For the Sauce:

  • 1 medium onion, chopped
  • 4 oz mushrooms, wiped clean and thinly sliced
  • 2 cloves garlic, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 28 oz jar tomato sauce
  • 1/4 cup red wine
  • 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried)
  • 2 teaspoons chopped fresh basil (or 1 teaspoon dried)
  • 2 teaspoons brown sugar
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
  • 2 tablespoons grated Parmesan cheese

For the Filling:

  • 1 lb part-skim ricotta cheese
  • 1 egg white (or 1 whole egg)
  • 1 lb fresh spinach (or 1 package frozen, thawed and blanched for 1 minute)
  • Freshly ground black pepper to taste
  • 8 oz part-skim mozzarella, thinly sliced

Other:

  • 6-8 no-boil lasagna noodles

Step-by-step

    • Saute the onion, mushrooms, garlic and any other finely chopped vegetable that you have on hand, in the olive oil in a large pot or dutch oven until tender.
    • Add tomato sauce, wine, oregano, basil, sugar, salt and some pepper and stir well.
    • Cover and allow to simmer for 12 minutes, stirring continually.
    • Stir in the parmesan cheese and set aside.
    • In cuisinart, mix ricotta with egg white, some pepper and add spinach. Mix well.
    • Assemble the lasagna in a 10 inch square shallow baking dish. First spread 1/3 of the sauce evenly over the bottom of the dish.
    • Lay four uncooked lasagna noodles side by side in the sauce, and then cover them with a layer of 1/2 of the spinach mixture and a layer of mozzarella slices.
    • Repeat the layering process.
    • Spread half of the remaining sauce atop the cheese, and then cover it with the remaining lasagna.
    • Layer the rest of the spinach mixture and the last of the mozzarella.
    • Top the dish with the remaining sauce and place it in the oven at 350 degrees F for 30 minutes.
    • Let the lasagna stand for 15 minutes before serving.
