Ingredients:

  • 4 Cox's apples, peeled, cored & halved
  • 7 ounces puff pastry
  • 8 ounces caster sugar
  • 4 teaspoons butter
  • 1 teaspoon cinnamon

Step-by-step

    • Preheat oven to 180°C. Smooth butter over the base of a casserole dish 11in in diameter and 4in deep, sprinkle with sugar and cinnamon.
    • Place apple halves in the dish on the butter, arrange symmetrically with one half in the centre.
    • Roll the puff pastry to about 1/8in in thickness, cut a disk 14in in diameter and lightly prick with a fork. Lay it over the apples and tuck it down the sides between the apple and the dish.
    • Place the dish on a medium heat on the stove and watch carefully around the edges as the butter and sugar begin to make a golden caramel.
    • Transfer the dish to the oven and bake for 30 minutes until the pastry is golden and crisp. Remove from oven and leave to cool slightly in the dish.
    • To serve, gently heat the dish on the stove to loosen the caramel if it has set. Carefully give the dish a shake and slide the pie onto a plate.
    • Serve with double cream, custard or your favourite ice cream.
