Super Quick and Easy Fried Potatoes
My family loves fried potatoes and onions, but I've always found them annoyingly labor intensive. I admit, I can be a lazy cook at times! These are the result of having items on hand and craving fried potatoes. They're not exactly the same as what my good, Southern Grandma makes, but hey, for "super quick and easy", I'll take 'em!

Super Quick and Easy Fried Potatoes: A Busy Woman's Delight

As a working mom, time is my most precious commodity. Dinner needs to be quick, easy, and preferably something the whole family will enjoy. Fried potatoes and onions are a staple in our house, a comfort food that always hits the spot. However, traditional fried potatoes are notoriously time-consuming, requiring peeling, chopping, and meticulous attention to prevent burning. That’s where this recipe comes in – a lifesaver for busy weeknights!

This recipe uses frozen steak-cut fries and chopped onions, shaving off a significant amount of prep time. I know, I know – some purists might scoff at the idea of using frozen potatoes. But trust me, this shortcut doesn’t compromise on flavor. The result is crispy, flavorful potatoes and onions, cooked to perfection in under 30 minutes. It's the perfect side dish to complement a variety of meals, from hearty stews to simple grilled chicken.

The beauty of this recipe lies in its simplicity. There's no complex technique or exotic ingredients required. Just a few basic pantry staples and a little bit of patience are all you need to create a delicious side dish that the whole family will love. And the best part? The cleanup is a breeze! This recipe is not only quick and easy but also adaptable. Feel free to experiment with different herbs and spices to customize the dish to your liking.

I often serve these fried potatoes alongside pinto beans and cornbread, a classic Southern combination that’s always a crowd-pleaser. The slightly spicy pepper complements the sweetness of the cornbread beautifully. But honestly, these potatoes are versatile enough to pair with almost anything – burgers, steaks, grilled fish; the possibilities are endless.

On busy weeknights, when my energy levels are low and the clock is ticking, this recipe is my go-to. It’s a reliable fallback that always delivers delicious, satisfying results, without requiring hours of preparation or a culinary degree. It’s a small victory in the daily grind of motherhood, a reminder that delicious food doesn't have to be complicated. And that, my friends, is a comforting thought.

So next time you’re short on time but craving something comforting and flavorful, reach for this recipe. It’s a testament to the fact that even the simplest dishes can be incredibly satisfying and delicious, proving that sometimes, less is truly more.

Beyond the Recipe: Quick Cooking Tips for Busy Weeknights

Life gets hectic. Between work, kids, and everything else, finding time to cook can feel like a Herculean task. But even with a packed schedule, you can still enjoy delicious, home-cooked meals. Here are some of my go-to tips for streamlining the cooking process:

  • Meal prep on the weekend: Chopping vegetables, marinating meats, or even prepping entire meals in advance can save you a significant amount of time during the week.
  • Embrace frozen ingredients: Frozen vegetables, fruits, and even pre-cut meats can be incredibly convenient and don't compromise on flavor.
  • One-pan meals: Minimize cleanup by opting for one-pan or sheet-pan recipes.
  • Utilize your slow cooker or Instant Pot: These appliances are perfect for creating delicious meals with minimal hands-on time.
  • Keep your pantry stocked: Having essential staples on hand allows you to quickly throw together meals even when you’re short on time.
  • Don't be afraid to use shortcuts: Pre-cut vegetables, pre-cooked grains, and convenience items can save you valuable time without sacrificing taste.
  • Cook extra and freeze leftovers: Double your recipes and freeze half for a quick and easy meal on another night.
  • Get the kids involved: Even young children can participate in simple tasks like washing vegetables or setting the table.
  • Embrace imperfection: Don't stress over making everything perfect. Sometimes, a slightly imperfect meal is still a delicious and satisfying meal.

Cooking shouldn't be a chore; it should be a joy. By incorporating these simple strategies into your routine, you can make cooking a more manageable and enjoyable part of your busy life. Remember, taking shortcuts doesn't mean sacrificing flavor or quality. It simply means reclaiming time and energy, allowing you to focus on what truly matters—enjoying delicious meals with your loved ones.

Step-by-step

    • Heat 2 tbsp. oil in a deep frying pan over medium-high heat.
    • Add thawed french fries and begin to break them into pieces using a wooden spoon.
    • Stir to coat with oil and saute briefly.
    • Add frozen onions and drizzle all with the remaining 2 tbsp. of cooking oil. Stir again and continue until some browning of the edges of the potatoes starts to occur.
    • Once you see the browning, cover and reduce heat to low and allow to cook for approximately 30 minutes or long enough for the onions to be cooked through and the potatoes to be completely heated.
    • Sprinkle with pepper to taste, stir and serve. No salt is necessary because the frozen potatoes are lightly seasoned.
