My Comfort Food: Chicken and Dumplings

As a busy working mom, finding time to cook a hearty and delicious meal can feel like a Herculean task. But there's nothing quite like the satisfaction of a home-cooked meal, especially when it's something as comforting and satisfying as chicken and dumplings. This recipe isn't just easy, it's adaptable to whatever ingredients you have on hand, and it consistently produces a dish that my family absolutely devours. It's my go-to weeknight meal, the one that makes everyone happy, even on the busiest of days. The aroma alone fills the house with a warmth that speaks of love and togetherness, reminding me of simpler times, simpler joys.

The secret to my perfect chicken and dumplings lies not in fancy techniques or obscure ingredients but in simple, fresh flavors and a little bit of patience. I use boneless, skinless chicken breasts or thighs – whatever's on sale! – and let them simmer gently in a flavorful broth of chicken broth, cream of chicken soup, and a generous helping of fresh herbs. Parsley, oregano, and thyme are my staples, but feel free to experiment with your favorites. A touch of garlic and a sweet onion add depth to the flavor profile. The carrots and celery are added later, toward the end of the cooking time, to keep them wonderfully crisp. I prefer to use store-bought biscuits for the dumplings; they're easy to work with and create wonderfully fluffy, tender dumplings.

The beauty of this dish is its adaptability. On busy weeknights, I throw everything into the slow cooker and let it do its magic. The slow cooker does an amazing job of tenderizing the chicken and infusing the broth with intense flavor. For a quicker weeknight meal, I often use a large pot on the stovetop, reducing the cooking time significantly. Either way, the result is a bowl of perfectly cooked chicken and dumplings, tender and flavorful.

Beyond the Recipe: A Symbol of Home

For me, this dish is more than just a meal; it's a reminder of home, of comfort, and of the simple pleasures in life. It's the smell that transports me back to my childhood kitchen, filled with the warmth of my grandmother's cooking. It's the taste that reminds me of cozy evenings spent with family, laughing and sharing stories around the dinner table. It's the feeling of satisfaction that comes with creating something delicious and nourishing from simple ingredients.

I encourage you to try this recipe and make it your own. Experiment with different herbs, add other vegetables, or try different types of biscuits. The possibilities are endless! Most importantly, enjoy the process, savor the flavors, and create your own special memories around this comforting classic.

Tips and Variations:

For extra flavor: Add a splash of white wine or chicken sherry to the broth.

For a spicier kick: Add a pinch of red pepper flakes or a dash of hot sauce.

For a heartier meal: Add cooked potatoes or noodles to the broth.

For a vegetarian version: Replace the chicken with firm tofu or mushrooms.

No matter how you make it, I hope you'll enjoy this simple, satisfying recipe as much as I do. It's a dish that speaks to the heart, a reminder that even the simplest meals can be filled with love, warmth, and delicious flavors.

Step-by-step

    • Through everything in a crockpot and cook on high until chicken is able to shred with a fork easily. Sometimes 2-4 hours depending on types of chicken.
    • I keep my carrots and celery on the side and add them a little later so that they still have some crunch.
    • Use Pillsbury biscuits to roll balls of dough to make easy dumplings.
    • After chicken is completely cooked and shredded, you can add the dumpling dough.
    • I cook mine maybe 45 mins more after adding dumplings.
    • Amount of dough is really by choice.
