My Favorite Chilli Recipe: A Cozy Kitchen Adventure

As a busy working mom, finding time to cook delicious and satisfying meals can feel like a Herculean task. But let me tell you, this chilli recipe is a lifesaver! It’s hearty, flavorful, and incredibly versatile – perfect for a weeknight dinner or a casual weekend gathering. The best part? It practically cooks itself, leaving me more time to focus on what really matters: my family and, let’s be honest, a little bit of much-needed "me time."

The beauty of this recipe lies in its simplicity and adaptability. You can easily adjust the ingredients to your liking and what you have on hand. I love using ground beef, but ground turkey or even vegetarian crumbles would work wonderfully. Feel free to experiment with different types of beans, too – black beans, pinto beans, or even a mix would add a delightful twist. And don’t be afraid to add a dash of your favorite hot sauce for an extra kick! The aroma alone will fill your kitchen with warmth and comfort, creating the perfect ambiance for a relaxing evening. You'll find yourself drawn back to this recipe again and again because it's just that satisfying and easy.

The process is incredibly straightforward. The initial sautéing of onions, garlic, and peppers builds a flavorful base, while the slow simmering allows the flavors to meld beautifully. The longer it simmers, the richer and deeper the taste becomes. The ingredients themselves are readily available at any grocery store which makes it both simple to prepare and budget-friendly. I often double the recipe, making a large batch that I can enjoy throughout the week. It reheats wonderfully and the flavors actually seem to get even better with time. It’s incredibly versatile too; sometimes I serve it with crusty bread for dipping, other times I pair it with fluffy rice or even a simple side salad. The possibilities are truly endless. This is a recipe that has found its permanent place in my weekly meal rotation and I am happy to share it with you all.

This Chilli recipe is not just a meal; it's an experience. It's about creating a comforting atmosphere in your kitchen, savoring the aromas, and enjoying the company of loved ones. More than just a recipe, it's a testament to the power of simple ingredients transformed into something truly special. It’s a story of a busy mom finding a way to create healthy delicious food efficiently and share it with her family. It embodies the heart of home cooking: love, care, and a little bit of magic.

Ingredients:

  • 1 can chicken broth
  • 1 onion
  • 2 tbsp chili powder
  • 1/4 cup white vinegar
  • 1 tsp sugar
  • 1 shallot
  • 8 cloves garlic
  • 2 tbsp cumin
  • 2 cups ground meat
  • 2 bell peppers (green + other color)
  • 2 large cans whole peeled tomatoes
  • 1 kidney beans
  • 1 bottle full-flavored beer

Step-by-step

    • Heat a large stock pot on high until it becomes too hot for the touch.
    • Add the oil and when it begins to shimmer add the onions, garlic, jalapeno and shallots, and stir until soft.
    • Reduced heat to medium-high.
    • Add meat with salt and pepper and cook until brown, breaking it up into smaller pieces with a wooden spoon.
    • Open the can of whole tomatoes, drain liquid and reserve.
    • Use a knife to cut the tomatoes into smaller pieces while they are in the can.
    • Add the tomatoes and half of the juice to the pot.
    • When the liquid boils, add the beans, beer, broth, liquid smoke, sugar, cumin, chili powder and vinegar.
    • When it boils, reduce heat to medium-low, partially cover the pot and cook 2-3 hours.
    • You want the liquid in your pan to reduce. If you sense things are drying up too quickly, ladle and stir in the remaining tomato juice.
    • This should have the consistency of a thick stew.
