    • Combine gelatine, ½ cup sugar, salt and instant coffee in sauce pan.
    • Beat egg yolks with milk, add to gelatine mixture, stir over low heat until gelatine is dissolved and mixture thickens slightly, about 10 min.
    • Remove from heat, add almond extract & chill.
    • Stir occasionally until mixture drops from spoon.
    • Beat egg whites until stiff, fold into mixture.
    • Beat whipping cream & fold into whole mixture.
    • Garnish with almonds or shaved chocolate.
    • Use graham cracker or chocolate crumb crust.
