Apple Raisin Oatmeal Bars: A Home Baker's Delight

My Favorite Oatmeal Bars: A Simple Recipe for Busy Days

Life as a working mom is a whirlwind. Between early mornings, school runs, work deadlines, and evening chores, finding time for myself, let alone elaborate baking projects, feels like a luxury. But there's something deeply satisfying about creating something delicious from scratch, a little treat to share with my family, a small moment of calm amidst the chaos. That's where these Apple Raisin Oatmeal Bars come in. They're incredibly easy to make, requiring minimal ingredients and even less fuss, yet they deliver a flavor explosion that's hard to resist. The dense texture, reminiscent of a thick oatmeal raisin cookie, is perfectly complemented by the sweet and creamy icing. Honestly, it's the kind of treat that keeps you coming back for more – even when you’re already full!

I discovered this recipe a few years ago when I was searching for a quick and satisfying dessert that didn’t involve a ton of specialized equipment or complicated steps. I've tweaked it over time, perfecting the balance of spices and the consistency of the icing. The result is a recipe I can confidently share—a recipe that’s become a staple in our household, a go-to for quick gatherings, or simply a comforting treat on a busy weeknight. The beauty of this recipe is its adaptability; you can easily adjust the sweetness, add different dried fruits, or even experiment with nuts. This versatility is what makes it a perfect fit for my ever-changing schedule and ever-evolving preferences.

One of the things I love most about these bars is the way they bring people together. Whether it's sharing a plate with my kids after dinner, taking them to a school potluck, or bringing them to a friend's house for a casual get-together, they always seem to be a hit. They’re easy to transport and portion out, making them ideal for any occasion. Plus, the simple act of baking them and sharing the end result brings a sense of joy and connection, a welcome respite from the day’s demands. So, if you’re looking for a simple, delicious, and satisfying treat that doesn't take hours to prepare, give these Apple Raisin Oatmeal Bars a try. You won’t regret it.

Ingredients: (These are easily adaptable to your preferences!)

  • Sugar: The sweetness anchors the other flavors.
  • Vanilla: Adds depth and warmth. A touch of almond extract would also be delightful.
  • Eggs: Bind everything together.
  • Salt: Enhances the other flavors; don't skip it!
  • Flour: Provides structure.
  • Baking Powder: Creates a lift.
  • Cinnamon and Nutmeg: Warm spices that complement apples beautifully.
  • Milk: Adds moisture.
  • Butter: Richness and flavor.
  • Applesauce: Adds moisture and a subtle sweetness.
  • Raisins and Dried Apples: These are the stars of the show, providing chewy texture and fruity bursts of flavor. Feel free to experiment with other dried fruits like cranberries or chopped apricots.

Tips and Variations:

  • For a richer flavor, use brown sugar instead of white sugar.
  • Add a cup of chopped nuts (walnuts, pecans, or almonds) for extra crunch.
  • If you prefer a less sweet bar, reduce the sugar by ¼ cup.
  • Feel free to experiment with different spices, like ginger or cardamom. A dash of allspice or cloves might be a nice addition!
  • To make it ahead of time, bake the bars and store them in an airtight container at room temperature for up to three days, or in the fridge for up to a week.

These Apple Raisin Oatmeal Bars are more than just a recipe; they're a reminder to savor the small moments, to find joy in simple pleasures, and to create delicious memories in the kitchen. Happy baking!

Step-by-step

    • Beat together eggs, butter and sugar
    • Add applesauce, vanilla, cinnamon & nutmeg
    • Mix flour, salt & baking powder together
    • Alternating with milk begin adding flour mixture and milk into batter
    • Add raisins and apple bits
    • Pour into greased 9 x 13 pan (Hint: I use sugar to coat not flour to avoid the white bottom and the sugar makes the bottom crunchy)
    • Bake in 350 oven for 30 minutes or until knife inserted into middle comes out clean
    • Cool in pan on wire rack
    • When completely cool: Spread with icing of: Milk, Confectioners sugar and vanilla (Mix until spreadable but not runny)
