Step-by-step

    • Combine all ingredients (except garnish) in a large stock pot.
    • Cover and cook 3-4 hours on low heat until beans are very soft. (This can be done also by cooking overnight on low)
    • When beans are done, puree in a food processor. (Be very careful with the hot liquid...)
    • Place beans back in pot and thin to desired consistency with extra beef or chicken broth.
    • Taste for salt.
    • Garnish with crispy tortilla chips, grated Monterey Jack cheese, chopped green onions and jalapenos.
