There are many in the Dallas area who remember Brockles Restaurant and the signature Special Dressing which was so incredibly popular from the 1940s - 70s. I grew up in that area but the restaurant was already gone when I came along. Though I've heard lots about this dressing. It was served on a fresh, crisp wedge of lettuce

Brockles Secret Special Dressing: A Taste of Dallas History

For years, I’ve heard whispers, legends almost, about Brockles Restaurant in Dallas. A place that, sadly, closed before my time, leaving behind a legacy more flavorful than any menu could ever describe: their Special Dressing. This wasn't just a condiment; it was a culinary icon, a beloved part of Dallas' gastronomic history, a creamy, tangy, slightly spicy delight served on crisp lettuce wedges, sending taste buds into a nostalgic frenzy. I've spent countless hours chasing down this elusive recipe, gathering fragmented memories and snippets of information from those lucky enough to have experienced its magic firsthand.

My quest for Brockles' secret dressing wasn't just about recreating a recipe; it was about connecting with a culinary past, about understanding the simple joy that a perfectly crafted dressing could bring. The stories I've heard paint a picture of a simpler time, where a restaurant could become a cherished community hub, its signature dishes etched into the collective memory. The dressing, with its unique blend of flavors, became more than just a condiment; it was a symbol of Brockles, a symbol of Dallas, a taste of nostalgia.

The journey to uncover this recipe felt like a treasure hunt. I spoke to older residents, pored over faded family recipe cards, and even ventured into forgotten corners of the internet, piecing together the puzzle one clue at a time. The lack of a definitive, readily available recipe only added to the challenge and increased my determination to unearth this culinary gem. Finally, after much searching, I managed to compile enough information to create a reconstruction – a tribute to the original, though not claiming to be identical.

What I discovered is that this isn't simply a mayonnaise-based dressing. Oh, there's mayo, certainly, but the true magic lies in the perfectly balanced proportions of its other ingredients. The sweet pickle relish, carefully drained to eliminate excess moisture, adds a delightful tanginess that cuts through the creaminess of the mayonnaise. The crumbled blue cheese introduces a sharp, pungent note, a complexity that elevates the dressing beyond the ordinary. And then there’s the paprika, a touch of smoky warmth that adds a subtle yet noticeable dimension of flavor and a vibrant color.

But perhaps the most important ingredient in this recipe is the time. Allow the dressing to rest in the refrigerator for a few days. The flavors will meld, deepen, and become even more harmonious. This isn't just about making a dressing; it's about creating a symphony of tastes that develop and mature over time. The result is nothing short of exceptional – a creamy, tangy, subtly spicy dressing that's both comforting and unforgettable.

Imagine biting into a crisp lettuce wedge, the cool crunch yielding to the rich, flavorful coating. It’s a taste of Dallas history, a testament to the simple pleasures of good food and even better memories. More than just a condiment, Brockles' Secret Special Dressing is an experience. It's a reminder that sometimes, the most cherished recipes are the ones that bring us back to simpler times, to the warmth of shared meals and treasured memories.

So, take the time to make this dressing. Savor its flavors, share it with your friends and family, and allow yourself to be transported to the nostalgic charm of Brockles Restaurant. Let the creamy embrace of this dressing transport you, even just for a moment, to a simpler time. It’s more than just a recipe; it’s a story; it’s a piece of Dallas history waiting to be savored, one delicious spoonful at a time.

And remember, this isn't just for lettuce wedges. Think burgers, crab cakes, even saltine crackers— the possibilities are as endless as the delightful memories associated with this iconic dressing.

Step-by-step

    • Spoon mayo into a mixing bowl.
    • Put the relish into a fine mesh strainer & press w/paper towel to eliminate excess liquid.
    • Add remaining ingredients, each w/a little stirring. Make sure blue cheese is very well crumbled.
    • Hand mix to an even color & texture. (a wire whisk works well)
    • Add another half-tsp of paprika for a little bolder color if desired. Dressing will be very thick. (If you desire a thinner consistency you can add a sm amt of buttermilk).
    • Put finished mix back into cleaned mayonnaise jar or container of your choice.
    • Keep refrigerated. (Tastes even better after a few days in fridge)
    • Will last refrigerated about as long as a jar of mayo (if there's any left;-)
    • Also great on saltine crackers, hamburgers, crabcakes and sooooo many other things! Enjoy: )
