Ingredients you'll need:

  • 1 medium onion
  • Salt & pepper
  • 1/2 cup sour cream
  • 2 tbsp yellow mustard
  • 8 oz shredded cheese
  • 1 lb lean ground beef/turkey/chicken/tofu/lentils
  • 1 large sweet potato, skinned and chopped
  • 1 lb bacon, chopped
  • 1 medium to large red pepper, chopped
  • 1 can diced tomato – drained or 5 plum tomatoes, chopped
  • 2 cloves garlic or 2 tbsp roasted garlic puree
  • A big ole healthy squirt of BBQ sauce
  • 1 sm can tomato paste
  • 1 can cheese soup or 10 oz Velveeta

  • Seasoned salt/paprika

Step-by-step

    • Get that bacon sizzlin'
    • Saute meat and drain
    • Saute onions and sweet potatoes in the bacon grease. Add peppers until soft. Add garlic, drained tomato and tomato paste
    • Preheat oven to 350
    • Add meat and bacon into veggies. Bring to boil and simmer for 5 minutes
    • Add 1/2 of the shredded cheese and stir it all in
    • Place mixture into greased 9x13 pan
    • Mix sour cream and cheese soup together and spread over top of meat and veggie mix (If using velveeta, get it melted before mixing with sour cream)
    • Spread curly fries over top of pan. Sprinkle with seasoned salt/paprika if desired
    • Bake 40-45 minutes until heated through and fries are browned
    • Add shredded 4 oz shredded cheese around 35-40 minutes and return to oven
    • Add toppings if necessary
