Chicken Broccoli Casserole
Grandma Sue got this recipe from her good friend Marsha who hated to cook. This was one of two things Marsha liked to make. The other was Breakfast Casserole. After I was an adult I discovered this dish is often called Chicken Divan.

A Comfort Food Classic: My Grandma's Chicken Broccoli Casserole

This recipe isn't just a dish; it's a portal to cherished memories. It's the taste of Grandma Sue's kitchen, a comforting hug on a chilly evening. The story behind it is as heartwarming as the casserole itself. You see, my grandma got this recipe from her friend Marsha, a woman who, let's just say, wasn't exactly known for her culinary skills. Marsha hated cooking. Absolutely hated it. Yet, miraculously, she managed to produce two dishes that were simply divine: a breakfast casserole (which I'll have to share sometime) and this incredible Chicken Broccoli Casserole. I remember as a child, the anticipation building as the aroma filled our home, a symphony of creamy mushrooms, tender chicken, and subtly spiced broccoli. It was a dish that transcended the ordinary, a simple meal elevated to something truly special.

Over the years, this recipe has become a family staple. It's the dish I reach for when I want to feel comforted, when I need a taste of home, a reminder of simpler times. It's a dish that has brought family and friends together around the table, a shared experience that bonds us through generations. It's easy to make, yet it always feels special, a testament to the magic that happens when simple ingredients come together in perfect harmony. The creamy mushroom soup provides a rich and decadent base, perfectly complementing the tender chicken and crisp-tender broccoli. A hint of lemon juice brightens the flavors, while the curry powder adds a subtle warmth that tantalizes the taste buds. The buttery breadcrumbs on top create a delightful crunch, adding yet another layer of texture and flavor. And while some may know it as “Chicken Divan,” to me, it will always be Grandma Sue’s Chicken Broccoli Casserole.

More than just a recipe, it's a story. A legacy of love, passed down from friend to friend, from generation to generation. A simple dish with an extraordinary impact. So grab your ingredients, gather your loved ones, and get ready to experience the magic of this classic casserole. The memories you create while sharing it will be as delicious as the casserole itself.
