    • Preheat oven to 350°F (175°C).
    • Separate eggs; allow egg yolks and whites and butter to stand at room temperature for 30 minutes. Use this time to grease and lightly flour 2 9x1 1/2 inch or 8x1 1/2 inch round pans; set pans aside.
    • Combine flour, baking soda, and 1/2 teaspoon of the salt in a small bowl. Set aside.
    • Put chocolate and water in a small saucepan and cook/stir on low until melted. Cool.
    • In a mixer bowl, beat butter for 30 seconds on high. Gradually add sugar until mixed. Stop and scrape sides of bowl. Beat 2 more minutes. Beat in egg yolks 1 at a time, beating well after each one (~1 minute total). Beat in chocolate mixture and vanilla. Alternately add flour mixture and buttermilk, beating on low until combined after each addition.
    • In a different mixer (or after thoroughly washing the beaters and using another bowl), beat egg whites on high until stiff peaks form. Gently fold egg whites into batter.
