My Instant Pot Bolognese Adventure: A Weeknight Winner

As a busy working mom, finding time to cook a delicious and satisfying meal can feel like a Herculean task. Between work deadlines, school pick-ups, and the never-ending cycle of laundry, the last thing I want to do is spend hours slaving over a hot stove. That's where my Instant Pot comes in, transforming weeknight dinners from a stressful chore into a quick and enjoyable experience. This Instant Pot Pasta Bolognese recipe has become a family favorite, a testament to how simple, fast, and incredibly flavorful home-cooked meals can be.

The beauty of this recipe lies in its simplicity. Forget spending hours meticulously browning meat and simmering sauces. The Instant Pot does all the heavy lifting, resulting in a rich, deeply flavored Bolognese that's ready in a fraction of the time. I love the convenience of it all! I can throw the ingredients into the pot in the morning, set the timer, and come home to a warm, aromatic meal waiting for us. The time saved allows me to focus on other things – spending quality time with my kids or catching up on work emails without stressing over dinner prep.

What I particularly appreciate about this recipe is its versatility. Feel free to adjust the ingredients to your preference. Instead of using just ground beef, I often mix it up with Italian pork sausage and veal for extra depth of flavor. Adding a splash of sherry brings a wonderful richness and complexity to the sauce, while the crimini mushrooms lend a lovely earthy note. And of course, no Bolognese is complete without a generous helping of olives! The flavors really meld beautifully together.

The process itself is incredibly straightforward. The Instant Pot guides you through each step with effortless precision. From browning the meat to layering the ingredients, the instructions are crystal clear. And the best part? The clean-up is a breeze! Compared to traditional stovetop methods, the Instant Pot makes post-dinner clean-up much easier and faster, another huge win in my book.

Step-by-step

    • Put a little olive oil in the bottom of the Instant Pot, set it to saute, and brown the meat.
    • Remove the meat. There should be a little fat or oil left. If there's a lot, drain, if there's none, add some olive oil.
    • Brown the onion along with the dry ingredients, adding the garlic in the last minute.
    • Remove (you can dump it on top of the removed meat).
    • Add a little more oil if necessary and brown the mushrooms.
    • Deglaze the pot with the sherry.
    • Return the meat and onions to the pot.
    • Add pasta in an even layer. If using spaghetti, break the stalks so that they lie flat in the pot.
    • Add the tomato sauce, water and crushed tomatoes, making sure the pasta is entirely covered.
    • Close up the IP, and set to manual, high pressure, 8 minutes.
    • When done, quick-release the steam.
    • Stir in olives.
    • Consume.
