Quick and Easy Baked Beans
My husband used to ask for baked beans every day when we first married. I made them this way to save time. I made them every day for a year, thinking he would get sick and tired of them and not ask for them all the time. After 24 years of marriage, this is still one of his favorite dishes.

Quick and Easy Baked Beans: A Love Story

Twenty-four years. That’s how long my husband’s love affair with my baked beans has lasted. It all started when we were newlyweds, a whirlwind romance culminating in a daily craving for a simple, comforting dish. He’d ask for them every single day. Now, I’m a practical woman, a wife who values efficiency in the kitchen, so I quickly developed a recipe that was both delicious and didn't require hours of slaving over a hot stove. I figured, I’d make them this way every day for a whole year; surely he’d tire of them eventually.

But I was wrong. Oh, so delightfully, wonderfully wrong. The year turned into two, then ten, then twenty-four, and this quick and easy baked beans recipe remains a staple in our home, a testament to the simple pleasures and lasting love that a good meal can foster. It's become more than just a recipe; it's a symbol of our journey, a comforting constant in our ever-changing lives. The aroma alone brings back memories of laughter, late-night talks, and the quiet contentment of sharing a simple meal together. It's a reminder that sometimes, the most cherished recipes are the ones born out of practicality and love.

The beauty of this recipe lies in its simplicity. No fancy ingredients, no complex techniques, just a handful of pantry staples transformed into a dish that is both satisfying and deeply personal. The optional bacon adds a smoky richness that elevates the dish, but honestly, even without it, the flavor is superb. I’ve experimented with different variations over the years – sometimes I drain the beans, sometimes I don't; sometimes I add a touch more brown sugar, sometimes less. The truth is, the recipe is as adaptable as the love it represents.

The microwave method is my go-to for busy weeknights. It's quick, it's easy, and it results in a perfectly heated bowl of deliciousness in just two minutes. Perfect for a quick lunch or a satisfying side dish. But if I have a little more time, the oven-baked version, with its crispy bacon topping, is a delightful treat, perfect for a lazy weekend brunch or a comforting dinner. The subtle smoky flavor from the bacon blends harmoniously with the sweet and savory notes of the other ingredients, creating a symphony of tastes that leaves you wanting more.

This recipe isn't just about the food; it's about the memories, the comfort, and the enduring connection it represents. It’s a testament to the power of simple pleasures, the beauty of consistency, and the enduring strength of a love that's seasoned with time, laughter, and a whole lot of baked beans. And while it's incredibly easy to make, and perfect for a busy day, the taste is anything but ordinary. It's a flavor that speaks volumes, a flavor of love, laughter, and twenty-four years of marriage. A flavor worth savoring, one spoonful at a time.

Over the years, I've shared this recipe with friends and family. It’s become a favorite among them, as well, creating new memories and strengthening bonds. The joy of sharing a meal, the satisfaction of creating something delicious, and the simple act of gathering around a table – these are the elements that truly make a recipe special. My baked beans aren't just food; they're a connection, a story, and a reminder of the little joys in life that make the biggest difference.

So, whether you’re a seasoned cook or a kitchen novice, I encourage you to try this recipe. It's more than just a dish; it's an experience. It's a taste of home, a reminder of the simple joys, and a perfect illustration of how the simplest ingredients can create something truly extraordinary. And who knows, maybe it will become your own love story, too.

Step-by-step

    • Drain beans (or not - I didn't and they tasted great). If you do drain them, do NOT rinse; however, if you are baking the beans in the oven, then don't drain them as much or not at all.
    • Mix in all other ingredients except bacon.
    • Microwave for 2 minutes and skip the bacon. (This is my preferred method).
    • Put bacon on top and bake at 350? for 45 minutes.
