Step-by-step

    • Combine the nuts and bourbon. Set aside for 2 hours.
    • Combine the butter and sugar with a pastry cutter until the consistency of meal.
    • Add the bourbon/nuts.
    • Refrigerate until you can roll into balls cleanly in hand.
    • Using a box grater, shave the canning wax (gulf wax).
    • Roll into balls on wax paper on cookie sheet. Place back in fridge until not soft.
    • In a double boiler, melt the dark chocolate adding 2 tbsp of wax shavings at a time. When you can dip your finger into the chocolate and it dries on the tip without gloss or stickiness, it is ready for dipping.
    • Dip the balls in the chocolate using toothpicks. Place back on waxed paper until solid.
