Step-by-step

    • Bake the potatoes until done
    • Prepare bacon
    • Turn up oven to broil
    • Cut top 1/4 off of potatoes (on the long side) - Keep the tops!
    • Scoop out potato, but leave enough to make a sturdy shell
    • Mash the potatoes with the onion that has been minced, milk, salt, pepper, butter, sour cream, most of the cheese and bacon.
    • Put a little bit of cheese and bacon in the bottom of each shell.
    • Stuff each shell with mashed potatoes.
    • Put some more cheese on top of potatoes. Put top of potato back on. You guessed it more cheese (cheddar works best here for colour).
    • CAREFULLY place potatoes on a cookie sheet or pizza pan (something sturdy) and broil for a few minutes (until cheese is melted and a little bubbly).
    • Enjoy the leftover mashed potatoes! These are the Chefs portion.
