Step-by-step

    • Place dressing in a small ramekin or dish on the middle of a plate. Square plates look best.
    • Cover plate with mesculin to make a salad base.
    • Distribute tomatoes over mesculin.
    • Squeeze lemon juice over.
    • Make rosettes out of the salmon and place on the mesculin in the corners.
    • Lay 3 prawns tail in, fanning from ramekin to plate edge between the salmon.
    • Sprinkle capers around the salad.
    • Dress with lemon wedges and any (optional) leaf herb if you have some. ie parsley, coriander etc.
