My family really enjoys this recipe. It's rich in flavor and makes you want to go back for another serving. The biggest problem with a lot of chowders is not enough flavor and having to add crackers or lots of salt to it; you won't need to with this!

My Hearty Chicken Corn Chowder: A Family Favorite

As a busy working mom, finding time to cook a delicious and satisfying meal for my family can sometimes feel like a Herculean task. But this Hearty Chicken Corn Chowder? It's my secret weapon. Not only is it incredibly flavorful and comforting, but it’s also surprisingly easy to make, even on a weeknight when time is tight. The secret? A few simple shortcuts and a whole lot of love (and maybe a little bit of bacon!).

I remember the first time I made this chowder. My kids, usually picky eaters, devoured it. They were clamoring for seconds, and even my husband, a self-proclaimed chowder connoisseur, praised its rich, creamy texture and perfectly balanced flavors. It was a revelation! No more bland, watery chowders that needed mountains of salt and crackers to be palatable. This recipe delivers bold, satisfying flavor right from the pot. It’s the kind of recipe that makes everyone feel warm and cozy, especially on a chilly evening. The best part? It’s adaptable to whatever you have on hand – feel free to experiment with different types of bacon (I’m partial to maple bacon myself!), or add in other vegetables like carrots or celery for extra nutrition.

What truly sets this chowder apart is its depth of flavor. The bacon starts it all off, rendering its rich fat into the base of the chowder and adding a smoky, salty deliciousness. The onions and garlic then add a sweet and savory depth. The creamy texture comes from the heavy cream and the addition of cream corn, while the potatoes provide a hearty base. Rotisserie chicken is my go-to shortcut; it’s already cooked and adds a significant amount of flavor to the soup without requiring any extra work. This recipe is a testament to the idea that sometimes the simplest meals are the most satisfying. And believe me, this chowder is supremely satisfying.

Beyond the Recipe: Comfort Food for the Soul

This chowder isn't just a recipe; it's a feeling. It’s the smell of bacon filling my kitchen, the happy chatter of my family gathered around the table, the warmth that spreads through my body as I take the first spoonful. It's a taste of home, of comfort, and of the love I put into creating something delicious for the people I care about most. In the hustle and bustle of everyday life, taking a moment to create something special, something truly nurturing, is a small act of self-care that ripples outwards, touching the lives of those around me.

Cooking is more than just preparing food; it’s an act of love, a way to nourish both body and soul. It’s a form of self-expression, a chance to experiment, to create, and to share something special with the people we love. And this hearty chicken corn chowder? It’s a perfect embodiment of all of that. So, grab your ingredients, put on some music, and get ready to create a culinary masterpiece that will leave your family wanting more.

Tips and Variations:

  • Spice it up: Add a pinch of red pepper flakes for a little heat.
  • Make it vegetarian: Omit the bacon and chicken, and add some mushrooms and lentils for extra protein.
  • Add some greens: Stir in some chopped spinach or kale at the end for added nutrients.
  • Make it ahead: This chowder tastes even better the next day! It's perfect for meal prepping.

So, the next time you’re looking for a delicious, comforting, and easy-to-make meal, give this hearty chicken corn chowder a try. You won't be disappointed! It’s a recipe that will become a staple in your kitchen, a warm hug in a bowl, and a testament to the power of simple ingredients and a whole lot of heart.

Step-by-step

    • Cook all sliced bacon in a large skillet (make sure the skillet is at least a 9 x 13 and is deep to hold all the ingredients).
    • Take bacon out and set aside. DO NOT DUMP GREASE!!! Leave grease and add chopped onion, garlic, and diced potatoes.
    • Cut bacon in small pieces and add into the potatoes, onion, and garlic.
    • Simmer with the cover on, stirring occasionally.
    • Once grease has dissolved into potatoes, add one can of chicken broth; simmer with the cover on until it's absorbed and add the other can.
    • Continue to stir occasionally.
    • Once potatoes are fully cooked, add corn, heavy cream, and chopped-up chicken.
    • Let it cool before you serve!
