Kittencal's Famous Caesar Salad
About This Recipe I developed this dressing years ago, and I can honestly say that you won't be able to keep your spoon out of the fridge for a taste, it is that good! Although I do think the dressing is better with the anchovy, it can certainly be made without them. In a pinch, I have even substituted buttermilk for the half-and-half cream, just use about the same amount. This dressing gets stronger with refrigeration time, so a small amount of fresh garlic goes a long way! Usually, one recipe without doubling is perfect for one large romaine lettuce; if you are serving a large crowd of people, you might want to double. Salad dressing will not work for this; use *only* mayonnaise. I find Hellman's brand mayonnaise works the best, and for the perfect companion to this salad, see my Kittencal's Garlic Croutons. LOWER-FAT OPTION: Use reduced-fat mayonnaise and fat-free half-and-half or low-fat milk. Also, see my Kittencal's Famous Greek Salad.

Kittencal's Famous Caesar Salad

My Famous Caesar Salad: A Culinary Journey

As a busy working mom, finding time to cook delicious and healthy meals can be a real challenge. But I believe that even with a packed schedule, we can still enjoy flavorful and satisfying dishes without spending hours in the kitchen. That's why I've perfected this Caesar Salad recipe – a simple yet elegant dish that's perfect for a weeknight dinner or a special occasion.

This isn't just any Caesar salad. It's the result of years of experimentation, tweaking, and taste testing, culminating in a creamy, tangy, and utterly irresistible dressing. The secret? It's all in the balance of flavors. The anchovies (optional, but highly recommended!) add a depth of umami that perfectly complements the sharp lemon juice, creamy mayonnaise, and fragrant garlic. The Dijon mustard provides a subtle bite, while the Worcestershire sauce lends a hint of savory complexity. And of course, no Caesar salad is complete without a generous helping of freshly grated Parmesan cheese.

I've always been passionate about creating dishes that are both delicious and accessible. This recipe is a testament to that. It's a perfect example of how simple ingredients can be transformed into something truly extraordinary. The combination of fresh romaine lettuce, crunchy croutons, and my signature dressing makes it a dish that’s always a crowd-pleaser. Whether you're serving it to your family or friends, this Caesar salad is sure to impress. And the best part? It's incredibly versatile. You can easily adjust the ingredients to suit your preferences and dietary needs. Want a lighter version? Opt for reduced-fat mayonnaise and low-fat milk. Prefer a bolder flavor? Add a touch more garlic or anchovy.

Over the years, this salad has become a staple in my household. It's the perfect side dish for barbecues, potlucks, or casual dinners. And, let's be honest, it's also incredibly satisfying on its own as a light lunch. This isn’t just a recipe; it’s a story of culinary exploration and the joy of sharing delicious food with loved ones. It’s a reminder that even the simplest dishes can hold a special place in our hearts and create lasting memories.

Beyond the practical aspects of convenience and deliciousness, this salad has become a symbol of my own personal growth as a cook and as a woman juggling the many roles of wife, mother, and career-woman. It represents the balance I strive for in my own life – finding simple joys amidst the chaos and creating something beautiful from humble beginnings. The time I spend making this salad, even with my busy schedule, is a moment of mindful creation, a pause in the everyday hustle to connect with the culinary arts, and, most importantly, with my family.

This Caesar salad recipe is more than just a collection of ingredients and instructions. It’s a testament to the power of simple, quality ingredients combined with a little bit of love and attention. It's a reminder that even amidst the everyday grind, we can find time to create something special and share it with the people we cherish most. It’s a small act of culinary love, a way to nourish not only our bodies, but also our souls.

Step-by-step

    • In a small 2-cup mini food processor, process/mince the anchovy fillets and garlic together until finely minced (do this together and firstly, otherwise it will not get minced properly with the other ingredients).
    • Add in the remaining ingredients, and process for 30 seconds, or more until well mixed.
    • Adjust seasonings to taste.
    • Thin with buttermilk (or milk) for a thinner consistency if desired.
    • Store in the fridge, covered in a glass container for 3 or more hours before using (the flavors become stronger when left in the fridge for a longer time).
    • Toss the desired amount of dressing with romaine lettuce and croutons.
    • Sprinkle with more grated Parmesan cheese if desired.
