My Banana Nut Cake Adventure

My Banana Nut Cake Supreme: A Deliciously Easy Recipe

As a busy working mom, finding time to bake can feel like a luxury. But sometimes, the simple pleasure of a homemade treat is exactly what I need to unwind and reconnect with my family. That's why I'm so excited to share this recipe for Banana Nut Cake Supreme – it's easy, delicious, and requires no eggs! This recipe is a twist on my mom's favorite, Lucille's Banana Cake, but with a few tweaks I think I've made it even better.

The inspiration struck me one afternoon when I was craving something sweet but didn't have a lot of time. I rummaged through my pantry, spotted some overripe bananas, and decided to experiment. The result was this incredibly moist and flavorful cake, perfect for any occasion. Whether it's a casual weeknight dessert or a special gathering, this cake is guaranteed to be a hit. The addition of walnuts and coconut adds a lovely texture and nutty flavor that complements the sweetness of the bananas perfectly. And oh, that frosting – a simple yet divine lazy daisy frosting – takes it to another level. Believe me, you'll want to double the frosting recipe!

The beauty of this recipe lies in its simplicity. There's no complicated technique or obscure ingredients needed. It's a straightforward recipe that even a novice baker can master. The most challenging part is probably waiting for the cake to cool before frosting it – a small price to pay for such deliciousness. One tip I learned the hard way: don’t skimp on the frosting! I tried it once with half the amount, and it was a real struggle to coat the entire cake evenly. Trust me, the extra frosting is worth it for that perfect, decadent finish.

This cake isn't just delicious; it's also incredibly versatile. You can easily adjust the sweetness to your liking by altering the amount of sugar. Feel free to experiment with different nuts or even add chocolate chips for an extra layer of indulgence. The possibilities are endless! The recipe is easily doubled too, perfect for potlucks or larger gatherings.

Beyond the recipe itself, this cake represents something more to me. It's a connection to my family, a reminder of my mom's baking, and a testament to the power of simple ingredients transformed into something extraordinary. I hope you enjoy it as much as I do. This is more than just a cake; it's a taste of comfort, a piece of home, and a little bit of happiness baked into every bite. So grab those bananas, gather your ingredients, and get ready to experience the joy of baking – and eating – this incredible Banana Nut Cake Supreme!

Tips for Success:

  • Use very ripe bananas for maximum flavor and moisture.
  • Don't overmix the batter; a few lumps are okay.
  • Test for doneness with a toothpick – it should come out clean.
  • Let the cake cool slightly before frosting.
  • Don't skimp on the frosting! It's worth it!

Enjoy this delicious cake and let me know how it turns out! Happy baking!

Step-by-step

    • Preheat oven to 350°F.
    • Grease and flour 9 x 13 inch pan
    • Cream Butter and sugar.
    • Add Banana.
    • Mix dry ingredients together
    • Mix vinegar with milk and allow to curdle.
    • Add dry and wet ingredients alternately to batter while beating.
    • Pour batter into pan.
    • Bake at 350°F for 35 - 40 min. Test with toothpick. Edges get done before the middle. Cover edges with foil and bake till done. I let the cake be a little underdone in the center and it was really yummy.
    • Very soft cake that falls easily.
    • Combine frosting ingredients
    • Spread evenly on hot or warm cake.
    • Place under broiler until warm, brown and bubbly. If cake is not completely covered edges might get too brown. I made this with half the frosting amount and it was really hard to cover the cake. I should have covered the edges. Live and learn.
