Step-by-step

    • Meat: Place meat in pot with lid. Cover with water. Add sliced onion, garlic and salt. Bring to a boil. Cover and simmer for 2+ hours until meat shreds easily with two forks. Reserve cooking stock for sauce.
    • Sauce: Use meat juice and add tomato sauce, oregano to taste and pepper.
    • Tortillas: Warm oil in a skillet. Add a tortilla. Warm tortilla in oil until tortilla starts to bubble, then fold in half and warm for a few more seconds. Remove to a plate lined with paper towels to absorb extra oil.
    • Assembly: Place meat in warmed tortilla. Add fixings. Top with sauce. Enjoy!
