I made this for some company I had coming over and she LOVED it. I made this with a simple side salad and store-bought garlic knots. Unfortunately, I forgot to take a picture until we had already eaten half of it, and it was not a pretty sight by then haha. Oh yea...feel free to add some diced chicken to stretch this out without breaking the bank. Just cook in batches. You can also scrap the meat altogether or replace with tofu or veggies for a vegetarian version.

Step-by-step

    • Start heating the water for the pasta (check package instructions).
    • Clean, rinse and thoroughly dry the shrimp before seasoning with Italian seasoning, garlic powder, dried basil, lemon pepper, and pepper flakes reserving the shells.
    • When water is boiling add around a tablespoon of salt (the water should taste like seawater).
    • Cook pasta according to package instructions.
    • Remove pasta reserving the water.
    • Add shrimp shells to the water and simmer for at least 5 minutes.
    • Meanwhile heat 1 tablespoon of olive oil and 1 tablespoon of butter in a 10-12" stainless steel or cast iron skillet over medium heat until butter foams/bubbles.
    • Add shrimp and cook until pink on one side and then flip.
    • Cook until completely pink and immediately remove and set aside (err on the side of under-cooking here since you can finish in the sauce later).
    • Add another tablespoon of butter and olive oil as well as the garlic.
    • Cook garlic until just fragrant.
    • Add the tomatoes and cook until they start splitting and releasing their juices.
    • Add 2 cups of pasta water (or more if you like sauce) scraping any brown bits off the bottom of the pan with a wooden spoon.
    • Simmer and reduce by half stirring occasionally.
    • Season with salt, pepper, garlic powder and a pinch of lemon zest to taste.
    • Add lemon juice and lower the heat to low.
    • Add the remaining butter and swirl it around until it emulsifies.
    • Add no more than half of the cheese and stir until it melts in.
    • Add the pasta and basil and fold into the sauce. Reserve some basil to sprinkle on top.
    • Top with shredded Parmesan cheese and more basil. Serve immediately.
