I needed to clean out the fridge one day and this happened. The sausage I mention are some of my favorite, and that includes all the gourmet stuff available nowadays. They are made in Texas. I live in Dallas, TX and Sams is the only place I can find them.

My Unexpected Kitchen Adventure: A Roasted Potato and Sausage Breakfast Hash

Mornings in my Dallas home are usually a whirlwind of activity. Between getting the kids ready for school, squeezing in a quick workout, and tackling my never-ending to-do list, finding time to cook a proper breakfast is often a luxury. But last week, something amazing happened. I was tackling the monster that is my refrigerator, and I discovered a treasure trove of ingredients just begging to be transformed into something delicious. This led to an unexpected culinary adventure, resulting in a breakfast hash so good, I felt compelled to share the recipe.

The star of the show was a package of Slovecek's Jalapeno Hot sausage. This Texas-made sausage is one of my absolute favorites – a spicy, flavorful delight that’s hard to find anywhere outside of my local Sam's Club. I also had a bag of fingerling potatoes, a few jalapenos hanging out in the crisper drawer, and a lonely half of a yellow onion. It was a classic case of "clean-out-the-fridge" cooking, and I wasn't expecting much, honestly. I just wanted to use up the ingredients before they went bad. But what emerged from the chaos was a breakfast hash that exceeded all expectations. The combination of crispy potatoes, spicy sausage, and slightly sweet onions created a flavor explosion that woke up my taste buds (and the rest of the family).

The process itself was surprisingly easy and straightforward. Roasting the potatoes beforehand ensured a perfectly crispy texture. I love the way they get slightly browned and caramelized in the oven. Cutting the sausage into small pieces ensured even cooking, and I discovered the key to the dish's success is a good balance of flavors and textures. The jalapenos added a welcome kick of heat, while the onions provided a touch of sweetness to perfectly offset the spice. Finally, scrambling some eggs into the mix at the end brought everything together in a satisfying and hearty breakfast feast.

This breakfast hash became an instant hit in our home. It's incredibly versatile, too. Feel free to experiment with different types of sausage, or add other vegetables like bell peppers or mushrooms. The beauty of this dish lies in its adaptability. It's a fantastic way to use up leftover ingredients and create a delicious and satisfying meal. But it's more than just a recipe; it's a testament to the magic that can happen when you embrace the unexpected in the kitchen and just let your creativity flow. You never know what culinary masterpiece might emerge from the depths of your fridge. So next time you're staring into the abyss of your refrigerator, don't be afraid to experiment! You might just discover your new favorite breakfast.

The ease of preparation, the delightful flavors, and the undeniable satisfaction of transforming leftover ingredients into something truly special makes this Roasted Potato and Sausage Breakfast Hash a must-try. It's a breakfast dish that’s perfect for busy mornings, or those days when you need a little something extra to brighten your day. Trust me, it’s a game-changer!

Step-by-step

    • In a medium mixing bowl, combine the potatoes with enough olive oil to coat (1-2 tablespoons usually) with the red pepper flakes, salt, and pepper. Toss to combine and coat all the potatoes.
    • Spread the potatoes out on a baking sheet and roast at 350 degrees for about 30 minutes, or until potatoes are cooked through (a fork should go through the potatoes with little resistance). Cut them into about 1/2 inch pieces. Set aside.
    • Cut the sausage link in half lengthwise. Cut those pieces in half so that you have 8 lengthwise quarter-links. Then cut each of these pieces cross-ways into four equal segments.
    • In a large non-stick skillet over medium heat, combine the sausage and potatoes and cook for 10-15 minutes, stirring occasionally. The idea here is to heat everything through and put some color on the potatoes and sausage.
    • Cut the peppers and onion into pieces that are about the size of a quarter. These will shrink so you don't want them too small to begin with. Substitute bell pepper here if you can't take the heat. Add these into the skillet and cook until they are cooked through but not cooked to death. Think fajita fixings or stir fry.
    • Beat the eggs together in a cup, and pour over everything in the skillet. Stir this mixture until the eggs are done. At this point it only takes about 1-2 minutes to scramble the eggs.
    • Remove from heat, enjoy.
