I used a mini silicone muffin holder since they are so flexible and I just popped the cups out after freezing. Easy! You can certainly use a regular muffin tin lined with paper liners though. For the thick chocolate coating, I made my own chocolate using cocoa powder, coconut oil, and sweetener. Feel free to simply use melted dark chocolate if that floats your boat! I added some sliced almonds on top before freezing which added a nice crunch. If looking for an oat-free option, you might be able to substitute the 1/4 cup of oats for more almond meal. My guess is that you’d need to add another 1/3-1/2 cup almonds to avoid the dough becoming too sticky.

Raw Almond Butter Cups: A Freezer-Friendly Delight

As a busy working mom, finding time to make healthy snacks is a constant struggle. Between juggling work deadlines, school pick-ups, and dinner prep, the last thing I want to do is spend hours in the kitchen. That's why I love recipes that are quick, easy, and require minimal ingredients. These Raw Almond Butter Cups are a perfect example. They satisfy my sweet tooth without sacrificing my health goals, and the entire process takes less than 30 minutes, including freezing time!

The beauty of this recipe lies in its simplicity. It utilizes the power of blending to create a flour-like consistency from raw almonds and oats. This forms the base for the cups, giving them a delightful texture. The addition of nut butter, coconut oil, and maple syrup binds everything together, creating a naturally sweet and satisfying treat. For the chocolate coating, I've opted for a homemade version using cocoa powder and coconut oil, but feel free to substitute your favorite dark chocolate if you prefer.

The process itself is incredibly straightforward. You essentially blend the ingredients for the base, press them into muffin cups, drizzle with the homemade chocolate sauce, add a sprinkle of sliced almonds (optional, but highly recommended!), and freeze. The freezing process solidifies the cups, making them easy to pop out of the molds. The result is a wonderfully chewy, rich, and intensely flavorful snack that's perfect for those busy days when you need a quick energy boost.

I've found these almond butter cups to be a fantastic addition to my after-school snack arsenal. The kids love them, and they're a much healthier alternative to store-bought sweets. They’re also great for a quick dessert after a long day. The perfect balance of sweet and nutty, they're addictive without the guilt! The best part? They’re made with wholesome ingredients that you likely already have on hand.

Beyond their convenience, these almond butter cups offer a multitude of health benefits. Almonds are packed with healthy fats, fiber, and vitamin E, contributing to overall well-being. Oats add another layer of fiber and nutrients, keeping you feeling full and satisfied. Coconut oil provides a healthy dose of medium-chain triglycerides (MCTs), which are readily utilized by the body for energy. The absence of refined sugar keeps this treat low on the glycemic index, preventing blood sugar spikes.

Whether you're a busy professional, a stay-at-home parent, or simply someone who appreciates a delicious and healthy snack, these raw almond butter cups are a must-try. They're the perfect blend of taste, convenience, and nourishment. So, next time you're craving something sweet, reach for these delightful little cups. You won't regret it!

Ingredients You'll Need:

  • Base:
  • 3/4 cup raw almonds, ground into meal
  • 1/4 cup rolled oats, ground into flour
  • 2 tablespoons raw almond butter (or nut butter of choice)
  • 1.5 tablespoons coconut oil (warmed if necessary)
  • 1.5 tablespoons pure maple syrup (or agave nectar)
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon pure vanilla extract
  • Pinch of fine grain sea salt
  • Topping:
  • 2 tablespoons cocoa powder
  • 3 tablespoons coconut oil
  • 3 tablespoons pure maple syrup (or 2 tbsp agave nectar)

Tips and Variations:

  • For an even richer chocolate flavor, use dark chocolate instead of the cocoa powder mixture.
  • Feel free to experiment with different types of nuts and nut butters. Peanut butter, cashew butter, or even sunflower seed butter would work well.
  • Add a pinch of other spices such as cardamom or nutmeg for a unique flavor profile.
  • If you don't have a mini muffin tin, a regular muffin tin lined with paper liners will also work.

These Raw Almond Butter Cups are more than just a recipe; they're a testament to the idea that healthy eating doesn't have to be complicated. With a little bit of creativity and a few simple ingredients, you can create a delicious and satisfying snack that fuels your body and pleases your palate. Enjoy!

Step-by-step

    • Add almonds and oats into a high-speed blender and blend on high until a flour forms.
    • Dump into a large bowl and break up any clumps with your fingers.
    • Add the nut butter, coconut oil, maple syrup (or agave), cinnamon, vanilla, and salt into the bowl. Stir until thoroughly combined. The dough should be fairly sticky like cookie dough.
    • Line a mini (or regular) muffin tin with paper liners or use a silicone muffin holder. Portion the dough into each muffin cup and press down until even and smooth.
    • To make the chocolate sauce: Whisk together the coconut oil, sweetener, cocoa powder, and salt until no clumps remain.
    • Spoon the sauce over top each of the cups, distributing evenly.
    • Garnish cups with sliced almonds if desired.
    • Place in the freezer in a flat area for 30-45 minutes, until firm.
    • Pop out the cups & enjoy immediately! These are best consumed straight from the freezer.
