My Go-To Potluck Star: Spaghetti Salad

As a busy mom, I'm always on the lookout for recipes that are easy to make, crowd-pleasing, and can handle a little bit of a wait. This spaghetti salad recipe ticks all the boxes! I first discovered it years ago at a church picnic and have been making it ever since. It's become my go-to dish for potlucks, barbecues, and even just a casual weeknight dinner. The best part? It's even better the next day, so feel free to make it ahead of time.

What makes this salad so special? It's the perfect balance of sweet, tangy, and savory flavors. The creamy Italian dressing forms a delicious base, complemented by the bright acidity of the vinegar and the savory depth of the spaghetti sauce. The crunch from the fresh vegetables adds a delightful texture, while the poppy seeds contribute a subtle nutty flavor that ties everything together. I've tweaked the recipe over the years to suit my own preferences, and now I'm excited to share it with you.

The beauty of this recipe lies in its simplicity. There’s no complicated chopping or precise measurements. The most important step is to make sure the spaghetti is cooked al dente, as this helps the noodles absorb the delicious marinade. I find that mixing it all together with my hands is the most effective method, ensuring that every strand of spaghetti is generously coated in the dressing. If you don't want to mix it with your hands you can use a large spoon or even a large mixing bowl and a wooden spoon. The choice is up to you!

This spaghetti salad is more than just a dish; it's a conversation starter. People are always curious about its unique flavor profile and how easy it is to make. It's a perfect example of how a simple recipe can create a memorable dish. I love watching people enjoy it, and the compliments are always a welcome reward for my efforts.

I often get requests for the recipe, and I'm always happy to share. It's a keeper for sure. I usually add extra garlic and poppy seeds for a little more zing. This really does amp up the flavour for this recipe and helps it to taste even better the following day.

Beyond the potlucks and barbecues, this spaghetti salad is also a great option for picnics and lunchboxes. The ingredients hold up well at room temperature, making it a perfect dish for outdoor gatherings. It’s a refreshing change from traditional sandwiches and can easily be transported to wherever you need it.

So, whether you're hosting a summer gathering, packing a picnic basket, or simply looking for a quick and easy meal, this spaghetti salad is a fantastic choice. Give it a try and let me know what you think! I hope you enjoy it as much as my family and I do.

Pro Tip: To make your prep even easier, you can prep all the vegetables the day before. Store them separately in containers in the fridge. This will save you a lot of time and hassle the day of your event. The noodles can also be cooked a day ahead of time.

Step-by-step

    • It's best to prepare the first part of the recipe the day before and then add the poppy seed, veggies, sauce and garlic the same day.
    • Cook the spaghetti noodles al dente (you want them to soak up some of the marinade). Rinse, strain and cool.
    • Combine with the whole bottle of Italian dressing, vinegar and whole bottle of salad supreme seasoning. Easiest to mix with your hands. Mix well and refrigerate which allows the noodles to marinate.
    • A few hours before serving, add the remaining ingredients. Once again, it's easiest to mix with your hands.
    • I also add more poppy seed and garlic to this recipe. I prefer to chop the veggies on the small side. They seem to mix better that way.
