Potato Soup
I mash some potatoes in the pot with a potato masher. Then I normally cook a few cubed potatoes on the side and add them to the pot of soup without mashing. I like chunks of potatoes in my soup, though.

This recipe, passed down with a few personal twists, is my go-to when I need a dose of simple happiness.

The beauty of this potato soup lies in its simplicity. It's a dish that allows for improvisation and personal touches. While some might prefer a completely smooth and velvety texture, I've always enjoyed the contrast of creamy broth with chunks of tender potato. This way, every spoonful offers a delightful variation of textures and flavors. The subtle earthiness of the potatoes perfectly complements the savory richness of the bacon and the creamy base, creating a symphony of taste that’s both satisfying and comforting.

The process is a leisurely one, a chance to connect with the food you're making. The aroma of frying bacon, the gentle simmering of the potatoes, and the final flourish of freshly grated cheese all add to the sensory experience. It's a reminder that cooking shouldn't always be a race against the clock; sometimes, it’s about slowing down and enjoying the process.

The ingredients are classic, readily available, and easily adaptable to your preferences. You can adjust the amount of bacon, cheese, or herbs to your liking. I often add a pinch of fresh thyme or rosemary for an extra layer of flavor. Experimentation is key; don't be afraid to personalize your soup to reflect your unique taste and preferences.

Beyond its deliciousness, this potato soup holds a special place in my heart. It reminds me of cozy evenings spent with family, sharing stories and laughter around a warm table. Step-by-step

    • In a large stock pot, combine potatoes and bouillon cubes and enough water to cover ingredients.
    • Bring to a boil and then simmer on medium heat while frying bacon.
    • Add half and half and cream of mushroom soup.
    • Stir until creamy.
    • Fry bacon while cooking potatoes. Add the celery and onion when frying the last pieces of bacon so that they can cook with the bacon.
    • Chop the bacon into bite-size pieces and add bacon, celery, and onion (with fat) into the pot of potatoes.
    • I sprinkle the cheese on top of the soup after pouring each serving in a bowl. You can add the cheese to your pot and stir, if you prefer.
    • Season as desired. I add salt and pepper to taste.
