A Refreshing Treat: My Chocolate Mint Fudge Pops

The summer heat can be relentless, but there's nothing quite like a cool, sweet treat to beat the swelter. This year, I decided to ditch the store-bought ice cream and try my hand at making my own popsicles. I’ve always been a sucker for anything mint chocolate, and the idea of a homemade, healthier version of those decadent chocolate mint ice cream bars was simply irresistible. The result? These incredible Chocolate Mint Fudge Pops! They're creamy, minty, and just the right amount of sweet, making them the perfect summer snack or dessert.

I must admit, the process was easier than I anticipated. I’m not exactly a culinary expert – more of a "wing-it-in-the-kitchen" kind of person. But this recipe was so straightforward, even I could manage it! The key is to pay attention to the cooking process, ensuring the mixture comes to a boil and then cools appropriately before pouring it into the molds. I used my trusty popsicle molds, which I've had for years. But any suitable molds will work perfectly. One of the things I love most about homemade popsicles is the ability to customize them to my liking. While this recipe is already delicious, I’m already brainstorming variations. Perhaps a swirl of peanut butter, or even some crushed Oreos for an extra layer of texture.

Beyond the simple pleasure of enjoying a cool treat on a hot day, making these popsicles felt incredibly rewarding. There’s something deeply satisfying about creating something delicious from scratch, knowing exactly what ingredients are going into your body. It's a much healthier alternative to many store-bought options, and it’s surprisingly cost-effective as well. Making a batch at home allows me to control the sugar content, avoiding those hidden nasties found in many processed desserts. The subtle sweetness of the Swerve (or your preferred sweetener) combined with the rich chocolate and refreshing mint creates a truly delightful flavor profile that's not overwhelmingly sugary.

These Chocolate Mint Fudge Pops are more than just a summer snack; they're a testament to the joy of simple pleasures and the satisfaction of creating something delicious with your own hands. They're the perfect treat to enjoy after a long day, shared with friends and family, or simply savored on a quiet evening. So, ditch the store-bought stuff and give these a try. You won't regret it! I guarantee these will become a new summer staple in your home, too.

Ingredients I used:

  • 1/3 cup unsweetened cocoa powder
  • 1 cup heavy cream
  • 1 cup whole milk
  • Pinch of salt
  • 1/3 cup granulated erythritol (I used Swerve)
  • 1 1/2 teaspoons arrowroot starch
  • 1 1/2 teaspoons peppermint extract

Tips and Variations:

  • Feel free to experiment with different sweeteners to suit your taste.
  • Add a pinch of sea salt to enhance the chocolate flavor.
  • For a richer chocolate flavor, use dark cocoa powder.
  • If you don't have arrowroot starch, cornstarch can be used as a substitute.
  • Get creative with add-ins! Chopped nuts, chocolate chips, or even a swirl of caramel would be delicious.

I hope you enjoy this recipe as much as I do. Let me know in the comments if you try it and how it turns out! Happy popsicle making!

Step-by-step

    • In a medium saucepan over medium-high heat, whisk together milk, cream, Swerve, cocoa powder, starch and salt.
    • Bring to a boil and cook one minute, stirring continuously.
    • Remove from heat and stir in peppermint extract.
    • Let mixture cool at least 10 minutes and then pour into popsicle molds.
    • Freeze 1 hour, then push wooden sticks partway into popsicles and return to the freezer (wooden sticks are best for staying in the pops when you take them out of the molds).
    • Freeze until solid, about 5 more hours.
    • To remove from molds, run under hot running water for 30 seconds or so
