Having recently moved to the Pacific Northwest from the East, I find new foods to cook with all the time. This time I found these beautiful Orca Beans in my local supermarket, so I decided to make some chili!

  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 teaspoon ground cumin

  • 14.5 ounces petite-diced tomatoes

Step-by-step

    • Put the dried Orca Beans in a large pot and cover with water by about 1 inch.
    • Bring to a boil and then lower heat to a simmer.
    • Cover and simmer for about 1.5 hours.
    • In a large pan, heat the olive oil.
    • Add the diced onions and saute until translucent.
    • Add the garlic and spices (cumin, chili, oregano, salt) to the onion and saute a couple minutes.
    • Remove from heat and set aside.
    • Using the same pan, add the ground turkey. Try to cook it so that it browns on the bottom.
    • Once turkey browns a bit, add the onion mixture and combine.
    • Add the diced tomatoes and the chicken broth to the pot with the beans.
    • Add the turkey mixture to the pot with the beans.
    • Combine and simmer until flavors come together and beans soften, about another hour or so.
