Step-by-step

    • 1 kg mince. Cook with required salt and 200 ml water till done. (Pressure cooker or open method).
    • In a pan, pour some oil and fry 2 medium onions (finely chopped).
    • 2 green chillies (finely chopped).
    • 8 cloves garlic (finely chopped).
    • 1 inch ginger (finely chopped).
    • Handful curry leaves (finely chopped).
    • Sauté well.
    • Add the cooked mince and fry constantly, turning over on medium heat. (Better to use a non-stick pan for this).
    • Add in 1 teaspoon pepper powder and 1 teaspoon mixture of powdered cloves, cinnamon, and cardamom (total 1 tsp).
    • Check salt.
    • Fry till almost dry but not too dry or brown.
    • Cool well.
    • Grind the whole mixture in a mixer.
    • For cutlets: For 1 kg mince, use around 3 mashed potatoes. Mix well. Shape into oval rounds 1 inch thick.
    • Dip in beaten egg and then bread crumbs and shallow fry both sides.
    • For keema: Season onions with chilli powder and turmeric and add in mince. Can add in cooked potato cubes and stir fry all for a few minutes.
